See that UPS truck? He's driving away from our house, having just brought us our favorite delivery of the year - live crawfish from Cajun Grocer in Lafayette, Louisiana. One of the things Amy misses most from her time in New Orleans is The Crawfish Boil. So, around her birthday every year, we splurge and have some delivered. This year, it was just for the two of us, so we got 15 pounds (hoping for a little extra for another dish).

.%3C/p%3E%3Cp%3EIt%20was%20a%20crisp,%20warm%20Saturday%20morning,%20and%20Amy%20was%20sitting%20on%20the%20front%20porch%20waiting%20(and%20not%20patiently,%20either!)%20for%20the%20brown%20truck%20to%20arrive.%20He%20carried%20the%20package%20over%20and%20said,%20%22Whatcha%20got%20in%20here?%20Lobsters?%22%20She%20answered,%20%22Heck%20no!%20Live%20crawfish!%20We're%20doing%20it%20New%20Orleans%20style%20today!%22%20He%20replied,%20joking,%20%22What%20time%20should%20I%20come%20back?%22%20She%20chuckled,%20he%20left,%20and%20Amy%20got%20to%20work.%3C/p%3E%3Cp%3EHere%20is%20how%20they%20arrive%20-%20in%20an%20unassuming%20little%20white%20cooler.%20You%20can%20only%20imagine%20the%20culinary%20delight%20that%20is%20inside,%20namely,%20a%20plastic%20net-style%20sack%20full%20of%20live%20crawfish,%20some%20freezer%20packs%20to%20keep%20them%20cool%20and%20alive%20during%20shipping,%20Louisiana%20Fish%20Fry%20Co.%20Crawfish%20and%20Crab%20Seasoning,%20and%20a%20zip%20bag%20with%20the%20invoice%20and%20directions.%20Not%20that%20we%20needed%20those!%3C/p%3E%3Cp%3EHere%20is%20our%20process,%20which%20was%20for%2015%20pounds%20of%20live%20crawfish.%3C/p%3E%3Cp%3EFirst,%20we%20must%20clean/purge%20our%20crawfish:%3C/p%3E%3Cp%3EStep%20One:%20Hose%20the%20crawfish%20sack%20with%20water%20thoroughly.%3C/p%3E%3Cp%3EStep%20Two:%20Empty%20sack%20into%20cooler%20and%20rinse%20again.%3C/p%3E%3Cp%3EStep%20Three:%20Sprinkle%2016%20ounces%20of%20table%20salt%20over%20the%20crawfish,%20then%20add%20enough%20water%20to%20cover%20the%20crawfish%20to%20purge%20them.%3C/p%3E%3Cp%3EStep%20Four:%20Let%20stand%20for%2010%20minutes.%3C/p%3E%3Cp%3EStep%20Five:%20Rinse%20crawfish%20thoroughly%20at%20least%20two%20more%20times.%3C/p%3E%3Cp%3EThen,%20we%20must%20prepare%20The%20Boil.%3C/p%3E%3Cp%3EThis%20is%20a%20bit%20more%20exciting,%20so%20we'll%20give%20you%20more%20pictures.%3C/p%3E%3Cp%3EStep%20One:%20Fill%20large%20pot%20with%20water,%20add%20the%2016-ounce%20package%20of%20seasoning%20sent%20with%20the%20crawfish%20plus%20one%20cup%20additional%20seasoning%20(we%20happened%20to%20have%20on%20hand%20because%20we%20know%20we%20like%20'em%20spicy!),%20and%20bring%20it%20to%20a%20rolling%20boil.%3C/p%3E%3Cp%3EStep%20Two:%20While%20waiting%20for%20the%20water%20to%20boil,%20prepare%20some%20%22other%20stuff%22%20-%20we%20like%20to%20add%20a%20couple%20of%20quartered%20lemons,%20a%20few%20quartered%20red%20potatoes,%20a%20large%20onion%20(also%20quartered)%20and%20some%20spicy%20sausage%20-%20and%20throw%20it%20in%20the%20pot.%3C/p%3E%3Cp%3EStep%20Three:%20Add%20the%20clean%20crawfish%20and%20boil%20them%20for%20only%205%20minutes.%3C/p%3E%3Cp%3EStep%20Four:%20Turn%20fire%20off%20and%20let%20crawfish%20soak%20for%201/2%20hour.%20Try%20to%20be%20patient%20and%20do%20NOT%20eat%20anything!%20Save%20room%20for%20crawfish!%3C/p%3E%3Cp%3EStep%20Five:%20Prepare%20your%20table%20by%20covering%20first%20with%20a%20couple%20of%20plastic%20trash%20bags%20laid%20flat,%20then%20with%20some%20newspapers,%20for%20no-fuss%20cleanup.%3C/p%3E%3Cp%3EStep%20Six:%20Try%20one%20or%20two%20to%20make%20sure%20they%20are%20to%20your%20liking.%20The%20longer%20they%20soak,%20the%20spicier%20they%20will%20be,%20so%20maybe%20give%20them%205%20more%20minutes,%20if%20you%20can%20wait%20that%20long...%3C/p%3E%3Cp%3EFinally,%20at%20long%20last,%20the%20best%20part%20of%20all%20-%20we%20pinch%20'da%20tails%20and%20suck%20'da%20heads!%20With%20Abita%20beer%20to%20wash%20'em%20down%20with%20and%20some%20Louisiana%20tunes%20on%20the%20stereo.%3C/p%3E%3Cp%3EOne%20heavenly%20hour%20later,%20we%20were%20elbow-deep%20in%20crawfish%20heads%20and%20shells,%20our%20bellies%20were%20full%20and%20our%20crawfish%20craving%20was%20(almost)%20satiated.%20The%20quality%20of%20the%20crawfish%20was%20excellent%20-%20they%20were%20just%20the%20right%20size%20and%20there%20were%20very%20few%20(maybe%203%20or%204)%20that%20had%20died%20in%20transit.%20And%20the%20flavor!%20Unbelievable!%3C/p%3E%3Cp%3EYou%20can%20see%20we%20do%20have%20a%20stainless%20steel%20bowl%20with%20a%20few%20tails%20that%20didn't%20get%20eaten%20right%20away.%20(Those%20were%20mostly%20from%20Chris).%20Those%20are%20the%20ones%20meant%20for%20another%20dish.%20we'll%20fill%20you%20in%20on%20that%20one%20later.%3C/p%3E%3Cp%3EThe%20Aftermath%3C/p%3E){kind=link}
