Ingredientes

  • 10 c. Sliced, hard, ripe pears -- Abt 5 pounds
  • 1/2 c. Finely minced green pepper
  • 1 1/2 c. Seedless raisins
  • 4 c. Sugar
  • 1 c. Minced crystallized ginger
  • 3 c. Cider vinegar
  • 1/2 tsp Pickling salt
  • 1/2 tsp Allspice berries
  • 1/2 tsp Whole cloves
  • 3 x Cinnamon sticks -- 2" long

Direcciones

  1. Place pears & next 6 ingredients in a saucepan. Tie allspice & cloves in a cheesecloth bag & add in along with cinnamon. Cook slowly till pears are tender & mix thick, about 1 hour.
  2. Remove spices. Ladle into clean, warm half-pint jars, leaving 1/2 inch headspace. Seal. Process for 10 minutes in a boiling-water bath or possibly steam canner.
