  1. Place pears & next 6 ingredients in a saucepan. Tie allspice & cloves in a cheesecloth bag & add in along with cinnamon. Cook slowly till pears are tender & mix thick, about 1 hour.
  2. Remove spices. Ladle into clean, warm half-pint jars, leaving 1/2 inch headspace. Seal. Process for 10 minutes in a boiling-water bath or possibly steam canner.
