Connola's Potato And Carrot Soup

Ingredientes

  • 1 lrg Onion, sliced
  • 2 Tbsp. Butter or possibly margarine
  • 5 c. Boiling Water
  • 1 1/2 lb Potatoes, thinly sliced
  • 1 x Bay leaf
  • 1 1/2 c. Cabbage, shredded
  • 1 c. Carrots, shredded
  • 1/2 c. Celery, thinly sliced
  • 1/4 c. Parsley, minced
  • 1 1/2 tsp Basil, dry Salt & Pepper

Direcciones

  1. Saute/fry onion and remove from pan. Boil potatos and bayleaf in water till potatos are tender. Mash potatoes and throw bay leaf away. Return potatos to water, add in onions and all remaining ingredients. Simmer approx. 15 minutes.
