%20to%20stay%20with%20you.%20%20What%20would%20I%20want%20to%20eat%20when%20I'd%20been%20on%20a%20plane%20for%20all%20that%20time?%20%20Nothing%20complicated.%20%20Nothing%20unfamiliar.%20%20Something%20sustaining%20but%20not%20heavy.%20%20Real%20Food,%20to%20counteract%20fake%20plastic%20plane%20food.%3C/p%3E%3Cp%3EChicken%20Stew,%20with%20Homemade%20Bacon,%20Leeks%20and%20Mushrooms...%3C/p%3E%3Cp%3E(Every%20picture%20I%20took%20of%20this%20meal%20turned%20out%20to%20be%20out%20of%20focus,%20hence%20they're%20all%20going%20to%20be%20tiny...)%3C/p%3E%3Cp%3EI%20love%20stew.%20%20I've%20said%20this%20before.%20%20This%20might%20not%20be%20a%20quick%20meal%20to%20prepare,%20but%20it's%20not%20complex.%20%20It's%20amazing%20what%20happens%20when%20you%20just%20leave%20something%20in%20the%20oven%20for%20a%20while.%3C/p%3E%3Cp%3EFor%20about%206%20people,%20or%203%20with%20masses%20of%20leftovers%3C/p%3E%3Cp%3E1%20of%20those%20packets%20of%20thighs%20and%20drumsticks%20that%20have%20four%20or%20so%20of%20each%20-%20free%20range,%20obviously.%20%20Or%201%20whole%20free%20range%20chicken,%20jointed,%20if%20feeling%20energetic.%20Bone%20in%20is%20important,%20but%20frankly%20any%20sort%20of%20chicken%20portion%20would%20be%20fine%3C/p%3E%3Cp%3E250g%20bacon%20lardons%3C/p%3E%3Cp%3E3%20large%20leeks%3C/p%3E%3Cp%3E450g%20mushrooms%20(any%20field%20sort%20-%20chestnut%20or%20mini%20portabellos%20would%20be%20extravagant)%3C/p%3E%3Cp%3E500ml%20good%20chicken%20stock,%20either%20home-made%20or%20using%20an%20organic%20cube%3C/p%3E%3Cp%3E3%20or%204%20bushy%20sprigs%20of%20thyme%3C/p%3E%3Cp%3E50g%20butter%3C/p%3E%3Cp%3EOlive%20oil,%20black%20pepper%3C/p%3E%3Cp%3EPrep%20the%20veg.%20%20Cut%20the%20darkest%20green%20parts%20off%20the%20tops%20of%20the%20leeks%20and%20about%20half%20a%20centimetre%20off%20the%20root%20end.%20%20Slice%20them%20in%20half%20lengthwise%20and%20fan%20each%20half%20out%20under%20the%20tap%20to%20clean%20it.%20%20Slide%20the%20%20leaves%20back%20together%20and%20slice%20crosswise%20into%20centimetre%20slices.%20%20Cut%20the%20mushrooms%20into%20quarters%20unless%20very%20small%20or%20very%20large.%3C/p%3E%3Cp%3EIn%20a%20large%20heavy%20casserole,%20melt%20the%20butter%20with%20a%20splash%20of%20olive%20oil%20to%20keep%20it%20from%20burning.%20%20Gently%20fry%20the%20leeks%20without%20colouring%20for%20around%2020%20minutes%20until%20soft.%20%20In%20the%20meantime,%20in%20another%20pan%20over%20high%20heat,%20brown%20the%20chicken%20with%20a%20little%20olive%20oil%20in%20batches.%20%20Remove%20to%20a%20plate.%20%20Turn%20the%20heat%20down%20and%20without%20cleaning%20the%20pan%20fry%20the%20bacon%20until%20coloured%20on%20all%20sides%20and%20the%20fat%20is%20beginning%20to%20run.%20%20Remove%20to%20a%20plate.%20%20Fry%20the%20mushrooms%20in%20the%20fat%20that%20ran%20out%20of%20the%20two%20meats.%3C/p%3E%3Cp%3EBy%20now,%20the%20leeks%20will%20have%20softened.%20%20Turn%20the%20oven%20on%20to%20150%E2%84%83.%20Combine%20as%20best%20you%20can%20the%20chicken,%20bacon,%20and%20mushrooms%20with%20the%20leeks%20in%20the%20large%20casserole.%20%20Tuck%20in%20the%20thyme%20sprigs%20and%20add%20a%20generous%20grind%20of%20black%20pepper.%20%20Don't%20add%20salt%20at%20this%20stage,%20unless%20you%20know%20that%20the%20bacon%20you're%20using%20isn't%20that%20salty%20-%20my%20homemade%20had%20plenty%20for%20the%20whole%20dish.%20%20Pour%20over%20the%20stock%20and%20top%20up%20with%20boiling%20water%20(and%20maybe%20a%20glass%20of%20white%20wine)%20until%20the%20meat%20is%20virtually%20covered.%20%20Bring%20the%20lot%20to%20the%20boil%20and%20then%20put%20it%20in%20the%20oven%20for%20around%20an%20hour.%20%20Test%20to%20see%20if%20the%20meat%20is%20falling%20off%20the%20chicken%20bones,%20it%20might%20need%20another%20half%20an%20hour.%3C/p%3E%3Cp%3E....with%20mustard%20mashed%20potatoes%20to%20soak%20up%20the%20juice%3C/p%3E%3Cp%3EMustard%20mash%20is%20my%20favourite%20sort.%20%20I%20loved%20mashed%20potato%20when%20I%20was%20a%20kid,%20it%20was%20my%20favourite%20sort.%20%20It%20even%20beat%20roast.%20%20Still%20does.%20%20One%20of%20those%20other%20things%20I%20learned%20to%20make%20when%20I%20was%20very%20young,%20along%20with%20custard.%20%20Sunday%20lunchtime%20in%20my%20mum's%20kitchen%20aged%20around%208.%3C/p%3E%3Cp%3EFor%206%20or%20thereabouts%3C/p%3E%3Cp%3EPut%20the%20potatoes%20and%20garlic%20in%20cold%20water%20with%20a%20pinch%20of%20salt%20and%20bring%20to%20the%20boil.%20%20Cook%20until%20soft%20right%20through.%20%20Drain%20and%20mash%20with%20the%20butter.%20%20Add%20the%20cr%C3%A8me%20fra%C3%AEche%20and%20stir,%20and%20as%20much%20milk%20as%20required%20to%20bring%20it%20to%20a%20smooth%20consistency.%20%20Season%20to%20taste%20with%20mustard,%20salt%20and%20pepper.%3C/p%3E%3Cp%3EI%20could%20eat%20mashed%20potato%20and%20the%20juice%20from%20the%20stew%20together%20forever.%3C/p%3E){kind=link}
