,%20when%20out%20comes%20Patty's%20bowl%20of%20Seafood%20Marinara%20topped%20with%20these%20weird%20spiky%20clusters%20that%20looked%20to%20me%20like%20creepy%20little%20splayed%20hands.%20What%20the%20heck%20was%20up%20with%20that%20dish?%3C/p%3E%3Cp%3EThat%20was%20my%20first%20sight%20of%20calamari%20in%20all%20its%20tomato-stewed%20glory%20swimming%20around%20in%20my%20buddy's%20dinner%20plate.%20She%20tucked%20into%20her%20meal%20with%20obvious%20relish%20so%20when%20she%20offered%20up%20a%20forkful,%20I%20tried%20a%20tentative%20bite.%20Not%20bad.%20Not%20like%20the%20tough%20little%20rubber%20band%20I%20expected.%3C/p%3E%3Cp%3EIn%20the%20eons%20since,%20I've%20eaten%20a%20fair%20bit%20of%20calamari%20when%20dining%20out.%20Our%20Crispy%20Crew%20particularly%20like%20Fried%20Calamari%20as%20an%20appetizer%20when%20we%20go%20out%20to%20a%20restaurant,%20and%20the%20fried%20squid%20cooked%20up%20gluten-free%20in%20a%20dedicated%20GF%20fryer%20at%20KD's%20Fish%20Fry%20in%20Ballston%20Spa%20is%20our%20favorite.%3C/p%3E%3Cp%3EI%20never%20had%20tried%20cooking%20with%20squid%20at%20home,%20so%20when%20I%20found%20a%20frozen%20block%20in%20my%20local%20supermarket%20I%20brought%20it%20home%20to%20play%20with.%20There%20was%20even%20a%20handy%20recipe%20for%20Calamari%20with%20Pasta%20on%20the%20back%20of%20the%20package,%20so%20that's%20what%20used%20for%20my%20foray%20into%20squid%20cookery.%3C/p%3E%3Cp%3EMy%20package%20of%20squid%20was%202.5%20lbs.%20and%20the%20recipe%20only%20called%20for%20half%20the%20amount,%20but%20I%20went%20ahead%20and%20thawed%20the%20whole%20thing%20since%20it%20was%20one%20big%20block.%20It%20involved%20a%20little%20picking%20over%20to%20remove%20a%20few%20bits%20of%20clear,%20flexible%20cartilage%20and%20even%20one%20teeny%20tiny%20squid%20beak.%20I%20patted%20it%20dry%20and%20took%20care%20in%20the%20cooking%20to%20ensure%20that%20it%20didn't%20get%20past%20the%20tipping%20point%20of%20tenderness%20and%20into%20rubbery%20terrain.%20It%20proved%20delicious%20and%20I%20was%20even%20able%20to%20sneak%20some%20black%20olives%20into%20the%20sauce%20though%20I%20live%20with%20a%20pack%20of%20olivephobes.%3C/p%3E%3Cp%3EHere's%20the%20tasty%20recipe,%20slightly%20adapted%20from%20the%20package:%3C/p%3E%3Cp%3ECut%20squid%20tubes%20into%20rings%20about%201/4%20inch%20thick.%20Leave%20tentacles%20alone%20to%20blossom%20into%20spiky%20little%20%22hands%22%20during%20the%20cooking.%3C/p%3E%3Cp%3EHeat%201%20Tbsp.%20of%20olive%20oil%20in%20large%20saucepan.%20Add%20garlic%20and%20saute,%20stirring%20constantly,%20for%201%20minute.%20Add%20mushrooms%20and%20cook%20for%20another%20minute,%20stirring.%20Add%20tomatoes,%20basil,%20parsley,%20and%20ground%20red%20pepper.%20Season%20with%20salt%20and%20pepper%20to%20taste.%20Add%20olives.%20Stir,%20lower%20heat%20and%20let%20simmer%20over%20low%20heat%20while%20you%20cook%20up%20the%20squid.%3C/p%3E%3Cp%3EIn%20a%20separate%20saucepan,%20heat%20remaining%201%20Tbsp.%20olive%20oil.%20Add%20squid%20pieces%20and%20cook%20over%20medium%20heat%20for%202-4%20minutes,%20stirring%20all%20the%20while%20and%20checking%20to%20see%20that%20the%20squid%20remains%20tender.%20DO%20NOT%20OVERCOOK!%20When%20done,%20add%20squid%20to%20tomato%20sauce%20and%20cook%20another%20minute%20or%20two%20to%20mingle%20flavors.%3C/p%3E%3Cp%3ECook%20up%20your%20pasta%20and%20while%20still%20warm,%20pour%20sauce%20over%20the%20top%20and%20toss%20with%20the%20sauce.%3C/p%3E%3Cp%3EMakes%204-6%20servings.%3C/p%3E%3Cp%3ESending%20a%20big%20thank%20you%20to%20my%20friend%20Patty%20for%20introducing%20me%20to%20the%20pleasures%20of%20calamari%20and%20a%20bowl%20of%20this%20deliciously%20squiddy%20pasta%20over%20to%20Presto%20Pasta%20Nights,%20the%20weekly%20roundup%20of%20all%20things%20noodly%20started%20by%20Ruth%20of%20Once%20Upon%20a%20Feast.%20This%20week's%20edition,%20Number%20161,%20is%20being%20hosted%20by%20Thyme%20for%20Cooking,%20a%20lovely%20French%20food%20blog%20and%20the%20roundup%20of%20delicious%20pastas%20will%20be%20featured%20after%20the%20April%2030%20deadline.%3C/p%3E){kind=link}
