%20and%20we%20thought%20it%20was%20awesome.%20%20In%20an%20attempt%20to%20kick%20it%20up%20a%20notch%20(and%20out-do%20my%20mother),%20I%20wanted%20to%20find%20some%20copycat%20recipes%20for%20our%20favourite%20Subway%20bread%20&%20sauce...%20Italian%20Herb%20&%20Cheese%20bread,%20and%20Southwest%20Chipotle%20Sauce.%3C/p%3E%3Cp%3EI%20found%20a%20couple%20different%20recipes%20for%20the%20bread%20(and%20there%20are%20lots%20of%20other%20copycat%20recipes%20out%20there%20for%20the%20other%20types%20of%20Subway%20bread),%20but%20I%20ended%20up%20using%20a%20version%20of%20this%20recipe.%3C/p%3E%3Cp%3ECombine%20yeast,%20honey%20and%20water%20and%20let%20rest%20for%205-10%20minutes.%20%20Combine%20flour,%20butter,%20and%20salt%20in%20a%20bowl%20and%20form%20a%20well.%20%20Pour%20yeast%20mixture%20in%20and%20knead%20until%20smooth.%20%20Cover%20and%20let%20rise%20until%20doubled%20in%20size%20(approx.%201%20hour).%20%20Punch%20down%20and%20cover%20and%20rise%20again.%20%20Cut%20into%203%20pieces%20and%20shape%20into%20loaves%20or%20rolls.%20%20Cover%20and%20let%20rise.%20%20Score%20each%20loaf%20a%20few%20times%20with%20a%20serrated%20knife.%20%20Brush%20with%20beaten%20egg%20and%20sprinkle%20with%20herbs%20&%20cheese.%20%20Bake%20at%20425%20F%20for%2020-25%20minutes%20with%20a%20dish%20of%20water%20in%20the%20oven%20to%20help%20create%20some%20steam.%3C/p%3E%3Cp%3EMy%20husband%20and%20daughter%20I%20love%20the%20Subway%20Southwest%20Chipotle%20Sauce,%20but%20I%20think%20it's%20probably%20safe%20to%20say%20that%20a%20homemade%20version%20of%20it%20would%20be%20a%20little%20healthier.%20%20There%20were%20lots%20of%20websites%20with%20a%20copycat%20version,%20but%20I%20switched%20up%20the%20ingredients%20ever-so-slightly%20to%20accomodate%20what%20was%20in%20my%20pantry,%20and%20here's%20what%20I%20came%20up%20with:%3C/p%3E%3Cp%3ESUBWAY%20SOUTHWEST%20CHIPOTLE%20SAUCE%3C/p%3E%3Cp%3E1/2%20c.%20mayo%3C/p%3E%3Cp%3E1%201/2%20tsp.%20lime%20or%20lemon%20juice%3C/p%3E%3Cp%3E1%201/2%20tsp.%20honey%20mustard%3C/p%3E%3Cp%3EEpicure's%20Chiptole%20Chili%20(start%20with%20a%20little,%20then%20add%20more%20till%20it%20tastes%20right%20-%20this%20stuff%20is%20hot%20so%20watch%20out!)%3C/p%3E%3Cp%3E1/2%20garlic%20clove,%20minced%3C/p%3E%3Cp%3EWhisk%20all%20the%20ingredients%20together%20and%20refrigerate.%3C/p%3E%3Cp%3EHere's%20how%20the%20sandwich%20turned%20out:%3C/p%3E%3Cp%3EThe%20bread%20wasn't%20as%20soft%20and%20light%20as%20Subway%20bread%20is,%20but%20that%20seems%20to%20be%20a%20trend%20in%20my%20bread-making...%20I%20don't%20think%20it's%20the%20fault%20of%20the%20recipe,%20but%20rather%20the%20fault%20of%20the%20baker%20(moi!)%20who%20clearly%20hasn't%20perfected%20the%20art%20of%20making%20bread.%20%20However,%20the%20herbs%20and%20cheese%20on%20top%20were%20delicious,%20and%20you%20have%20to%20admit,%20that%20bread%20sure%20looked%20a%20lot%20like%20the%20Subway%20version!%3C/p%3E%3Cp%3EThe%20sauce%20was%20great%20too%20-%20a%20simple%20recipe%20that%20leaves%20out%20all%20the%20preservatives%20and%20crap%20they%20most%20likely%20put%20in%20the%20stuff%20at%20the%20restaurant.%3C/p%3E%3Cp%3EI%20laid%20out%20the%20veggies,%20cheese,%20and%20meat%20on%20a%20plate%20and%20let%20the%20kids%20make%20their%20own%20subs,%20so%20everyone%20was%20very%20pleased%20with%20their%20personalized%20subs.%20%20Another%20successful%20supper%20in%20Kathy's%20Kitchen!%3C/p%3E){kind=link}
