.%20Seems%20like%20an%20oxymoron%20to%20me.%3C/p%3E%3Cp%3EAnyway,%20shrimp,%20tilapia,%20tuna,%20swordfish,%20scallops,%20crab%20legs,%20etc.,%20all%20come%20frozen%20and%20mostly%20available%20in%20one%20or%20two%20pound%20bags.%20The%20tilapia%20sold%20in%20bags%20goes%20one%20step%20further,%20sealing%20each%20fillet%20in%20its%20own%20separate%20plastic%20envelope%20before%20hand.%20Unfortunately,%20those%20are%20thin,%20almost%20tasteless,%20little%20fillets%20good%20for%20maybe%20a%20seafood%20chowder%20or%20soup%20and%20little%20else.%3C/p%3E%3Cp%3EImagine%20my%20excitement%20when%20I%20saw%20a%20package%20of%20nice%20and%20thick%20Tilapia%20fillets%20packaged%20in%20butcher%20trays.%20Yes,%20they%20were%20previously%20frozen,%20but%20they%20were%20large%20and%20substantial%20instead%20of%20the%20paper%20thin%20fillets%20in%20the%20bags.%3C/p%3E%3Cp%3EI%20decided%20to%20use%20the%20fillets%20to%20make%20a%20dish%20that%20I%20ordered%20and%20thoroughly%20enjoyed%20at%20McEwan's%20on%20Monroe%20in%20Memphis%20about%20a%20year%20ago,%20Coriander%20Crusted%20Tuna%20with%20Ginger%20Coconut%20Broth.%20The%20chef%20wouldn't%20give%20me%20the%20recipe,%20so%20I%20made%20it%20on%20my%20own%20with%20a%20little%20trial%20and%20error.%20This%20time,%20instead%20of%20tuna%20steaks,%20I%20used%20the%20Tilapia.%20I%20served%20it%20over%20steamed%20brown%20rice,%20topped%20with%20a%20little%20steamed%20spinach,%20then%20topped%20with%20the%20fish%20and%20a%20nice%20big%20ladle%20of%20the%20coconut%20ginger%20broth.%20It%20was%20delicious.%3C/p%3E%3Cp%3ECoriander%20Crusted%20Tilapia%20in%20Ginger%20Coconut%20Broth%3C/p%3E%3Cp%3Eby%20Terri%20Powers%20for%20Terri's%20Table%3C/p%3E%3Cp%3EFor%20the%20fish:%3C/p%3E%3Cp%3EPrepare%20the%20broth%20first.%3C/p%3E%3Cp%3EIn%20a%20medium%20saucepan,%20heat%20the%20roasted%20peanut%20oil.%20Add%20the%20grated%20ginger,%20green%20onions%20and%20coriander%20to%20the%20oil%20and%20saut%C3%A9%20over%20medium%20heat%20until%20fragrant,%20about%202%20minutes.%20Add%20the%20basil%20and%20cilantro%20and%20saut%C3%A9%20another%20minute.%3C/p%3E%3Cp%3EAdd%20the%20rest%20of%20the%20sauce%20ingredients%20and%20bring%20the%20broth%20to%20a%20boil,%20reduce%20the%20heat%20and%20simmer%20for%20about%2010%20minutes%20before%20preparing%20the%20fish.%3C/p%3E%3Cp%3ETo%20prepare%20the%20fish,%20salt%20and%20pepper%20one%20side%20of%20each%20fillet,%20then%20sprinkle%20liberally%20with%20about%201/2%20of%20a%20tablespoon%20of%20ground%20coriander%20for%20each%20fillet.%20Turn%20the%20fillets%20over%20and%20repeat%20the%20process.%3C/p%3E%3Cp%3EHeat%20the%20oil%20in%20a%20frying%20pan%20large%20enough%20to%20hold%20both%20fillets.%20Over%20medium%20high%20heat,%20cook%20the%20fish%20until%20a%20nice%20brown%20crust%20has%20formed%20on%20one%20side,%20about%202%20minutes.%20Gently%20turn%20the%20fish%20over%20and%20cook%20until%20a%20crust%20has%20formed,%20about%20another%202%20minutes.%20Do%20not%20overcook.%20Serve%20immediately.%3C/p%3E%3Cp%3ETo%20serve,%20put%20a%20large%20spoon%20of%20steamed%20white%20or%20brown%20rice%20in%20the%20bottom%20of%20a%20shallow%20bowl.%20Top%20the%20rice%20with%20a%20nice%20spoonful%20of%20seasoned%20steamed%20spinach.%20Place%20the%20a%20Tilapia%20fillet%20on%20top%20of%20the%20spinach%20and%20pour%20a%20nice%20big%20ladle%20of%20the%20Coconut%20Ginger%20Broth%20over%20all.%3C/p%3E){kind=link}
