Corkscrew Pasta With Spinach Pesto

Ingredientes

  • 1 bn spinach, rinsed and trimmed
  • 4 x garlic cloves salt, pepper
  • 1/2 c. extra virgin olive oil
  • 1 lb corkscrew pasta salt extra virgin olive oil
  • 1/2 c. mayonnaise pine nuts diced pimiento

Direcciones

  1. To make pesto, place spinach and garlic and salt and pepper to taste in food processor. With machine running, gradually add in 1/2 c. oil in thin stream through feed tube and process till sauce is consistency of thin mayonnaise.
  2. Set aside.
  3. Cook pasta in boiling water with 1 Tbsp. each salt and extra virgin olive oil till tender but hard, about 9 min. Drain in colander, then transfer to large bowl. Add in mayonnaise and 2 Tbsp. extra virgin olive oil. Mix well. Blend in pesto.
