.%20%20It's%20one%20of%20those%20unpleasant%20things%20you%20just%20never%20forget.%3C/p%3E%3Cp%3EUnwashed%20chickens%20and%20tree%20feet%20aside.....%3C/p%3E%3Cp%3EThis%20morning,%20I%20was%20hungry%20for%20Polenta%20and%20Eggs.%20%20Meaning%20I%20wanted%20soft%20breakfast%20Polenta.%20%20Some%20may%20argue%20that%20this%20makes%20it%20Grits,%20but%20I%20do%20not,%20for%20I%20am%20using%20fine%20ground%20Flint%20corn.%20%20The%20whole%20idea%20of%20soft%20breakfast%20polenta%20is%20that%20it%20is%20smooth%20and%20creamy,%20making%20it%20the%20perfect%20accompaniment%20to%20a%20braised%20egg.%20%20When%20I%20make%20Polenta%20for%20dinner,%20I%20use%20a%20slightly%20coarser%20grind%20making%20the%20polenta%20a%20little%20more%20hearty%20in%20texture.%20%20The%20finer%20grind%20I%20use%20for%20%22breakfast%22%20also%20means%20that%20the%20starches%20gelatinize%20a%20little%20faster,%20so%20I%20don't%20have%20to%20cook%20it%20quite%20as%20long.%20%20In%20truth%20it%20only%20saves%20about%2010-15%20minutes,%20but%20hey,%20every%20little%20bit%20helps.%3C/p%3E%3Cp%3EThis%20polenta%20has%20a%20slightly%20higher%20%22water%22%20content,%20so%20it%20will%20not%20%22set-up%22%20the%20way%20it%20normally%20would.%20%20Just%20so%20you%20know%20and%20don't%20get%20frustrated%20trying%20to%20make%20it%20solidify%20for%20frying.%20%20If%20this%20is%20your%20goal,%20reduce%20the%20chicken%20stock%20by%201/2%20cup%20to%20give%20you%20a%20full%203%20to%201%20ratio.%20(only%20part%20of%20the%20cream%20counts%20as%20water)%3C/p%3E%3Cp%3ECombine%20Chicken%20Stock%20and%20Heavy%20Cream%20in%20your%20CorningWare%20Saucemaker,%20then%20set%20it%20over%20medium%20flame.%3C/p%3E%3Cp%3EGo%20ahead,%20while%20you%20are%20waiting,%20and%20measure%20out%20the%20fine%20cornmeal,%3C/p%3E%3Cp%3Eand%20the%20Parmigiano-Reggiano%20cheese.%3C/p%3E%3Cp%3EOnce%20the%20Stock/Cream%20mixture%20comes%20to%20a%20boil,%20grab%20a%20whisk%20and%20begin%20swirling%20the%20liquid%20in%20the%20pot,%3C/p%3E%3Cp%3Ecreating%20a%20vortex%20in%20the%20center.%3C/p%3E%3Cp%3ESlowly%20sprinkle%20the%20corn%20meal%20in%20the%20center%20of%20the%20vortex%20while%20you%20continue%20whisking,%20to%20prevent%20lumps.%3C/p%3E%3Cp%3EOnce%20you%20have%20added%20all%20the%20cornmeal,%20you%20may%20stir%20less%20vigorously.%3C/p%3E%3Cp%3EBring%20back%20to%20a%20boil,%20while%20stirring,%20then%20reduce%20the%20flame%20and%20simmer%20the%20polenta,%20stirring%20every%205%20minutes%20or%20so,%20until%20it%20becomes%20thick%20and%20will%20hold%20a%20line%20when%20dropped%20from%20the%20whisk,%20about%2035-45%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20Parmigiano-Reggiano%20and%20stir%20until%20it%20has%20completely%20melted.%3C/p%3E%3Cp%3ESeason%20with%20White%20Pepper%20and%20Kosher%20Salt%20(though%20you%20may%20not%20need%20the%20salt)%3C/p%3E%3Cp%3EPolenta%20may%20be%20kept%20warm%20for%20up%20to%201%20hour%20by%20setting%20the%20Saucemaker%20in%20a%20larger%20pot%20filled%20with%20simmering%20water.%3C/p%3E%3Cp%3EWhich%20give%20you%20time%20to%20braise%20your%20eggs%20in%20a%20CorningWare%20skillet%20(P-83-B).%3C/p%3E%3Cp%3ESpoon%20the%20polenta%20into%20bowls%20as%20you%20finish%20braising%20each%20egg,%20and%20sprinkle%20with%20fresh%20cracked%20black%20pepper%20and%20you%20are%20good%20to%20go.%3C/p%3E%3Cp%3ECreamy%20smooth%20polenta%20and%20braised%20eggs....%20Breakfast%20of%20champions,%20especially%20after%20the%20yolk%20has%20been%20broken%20and%20added%20to%20the%20cheesy%20deliciousness.%3C/p%3E%3Cp%3EWhere%20is%20your%20CorningWare?%3C/p%3E){kind=link}
