Ingredientes

  • 1 c. yellow cornmeal
  • 1/3 c. granulated sugar
  • 1 c. all-purpose flour
  • 2 1/2 tsp baking pwdr
  • 1/4 tsp salt
  • 1 c. buttermilk
  • 6 Tbsp. unsalted butter, melted
  • 1 x egg, beaten
  • 1 1/2 c. fresh blueberries

Direcciones

  1. Preheat oven to 400 F. In a large bowl; sift together the first five ingredients. Fold in the buttermilk, butter, and egg till just moistened.
  2. Gently mix in the blueberries.
  3. Fill greased muffin c. 2/3 full and bake for 20 to 25 min. Let cold on a wire rack. Serve.
  4. YIELD: 12 MUFFINS
