Receta Corn Blueberry Muffins

Ingredientes
- 1 c. yellow cornmeal
- 1/3 c. granulated sugar
- 1 c. all-purpose flour
- 2 1/2 tsp baking pwdr
- 1/4 tsp salt
- 1 c. buttermilk
- 6 Tbsp. unsalted butter, melted
- 1 x egg, beaten
- 1 1/2 c. fresh blueberries
Direcciones
- Preheat oven to 400 F. In a large bowl; sift together the first five ingredients. Fold in the buttermilk, butter, and egg till just moistened.
- Gently mix in the blueberries.
- Fill greased muffin c. 2/3 full and bake for 20 to 25 min. Let cold on a wire rack. Serve.
- YIELD: 12 MUFFINS
