Corn, Lychee and Cucumber Salad Recipe
Ingredients:
- Lychees – 6, chopped
- Sweet Corn Kernels – 1/4 cup, boiled
- Cucumber – 1 cup, chopped
- Sugar – 1 tsp
- Honey – 1 tsp
- Juice of 1 Lemon
- Pepper Powder – 1/2 tsp
- Salt – a pinch
Method:
1. Combine the sweet corn, cucumber and lychees in a bowl.
2. Add sugar, salt, pepper powder and honey.
3. Mix well.
4. Add lemon juice and mix again.
5. Serve at once.
Tip: You can substitute Lychees with Nungu (also known as palm fruit).
