Cornmeal Cracklin' Bread

Ingredientes

  • 2 c. White cornmeal
  • 1 tsp Salt
  • 3 tsp Baking pwdr
  • 1/2 c. Cool water
  • 1/2 c. Lowfat milk
  • 1 x Egg, beaten
  • 1/2 c. Cracklin, (fried pork rind), minced into pea size pcs

Direcciones

  1. Preheat oven to 400 degrees F.
  2. Sift together cornmeal, salt and baking pwdr.
  3. Stir in water, lowfat milk and egg. Beat till smooth.
  4. Stir in cracklin. Pour into greased 9-inch skillet and bake for 30-35 min. Cut into wedges and serve warm.
  5. Serves 6.
