- 4 lbs. of good cooking apples, about 16 (I used Gala and Fuji and two Granny Smith)
- 1 cup apple cider vinegar
- 2 cups water
- 1-1/2 cups sugar
- 1 cup dark brown sugar
- 2 Tbsp. cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. ground allspice
- 1/2 tsp. ground nutmeg
- 1/2 tsp. salt

.%3C/p%3E%3Cp%3EI%20searched%20several%20CrockPot%20Apple%20Butter%20recipes%20for%20the%20one%20that%20appealed%20to%20me%20most.%20%20I%20was%20NOT%20about%20to%20peel%204%20lbs.%20of%20apples,%20and%20I%20found%20a%20recipe%20that%20didn't%20require%20peeling%20or%20coring%20(much%20of%20the%20pectin%20is%20in%20the%20cores%20and%20flavor%20and%20vitamins%20in%20the%20peels)%20so%20I%20chose%20this%20method.%3C/p%3E%3Cp%3EPrepare%20the%20fruit:%20%20Cut%20the%20apples%20into%20eight%20pieces,%20without%20peeling%20or%20coring%20them.%20%20Cut%20out%20any%20damaged%20parts.%3C/p%3E%3Cp%3EPut%20them%20into%20a%20large%20pot,%20add%20the%20vinegar%20and%20water,%20cover,%20bring%20to%20a%20boil,%20reduced%20heat%20to%20simmer%20and%20cook%20until%20the%20apples%20are%20soft,%20about%2020-30%20minutes.%20%20Remove%20from%20heat.%3C/p%3E%3Cp%3ELadle%20apple%20mixture%20in%20small%20batches%20into%20a%20food%20mill.%3C/p%3E%3Cp%3EThis%20was%20taking%20too%20long.%20%20I%20decided%20to%20puree%20the%20apple%20mixture%20in%20the%20blender%20and%20then%20pass%20through%20the%20food%20mill.%20%20This%20took%20much%20less%20time%20and%20much%20less%20effort.%3C/p%3E%3Cp%3EBeautiful%20apple%20puree%20underneath.%3C/p%3E%3Cp%3EPlace%20apple%20puree%20into%20CrockPot.%20%20Add%20remaining%20ingredients%20and%20mix%20well.%20%20Cook%20on%20HIGH%20setting,%20UNCOVERED%20for%205-6%20hours;%20stirring%20every%2020-30%20minutes%20or%20so.%20%20Cook%20until%20thick%20and%20smooth%20and%20the%20apple%20butter%20mounds%20up%20on%20your%20spoon.%3C/p%3E%3Cp%3ENow,%20if%20you%20would%20like%20to%20can%20it%20(which%20I%20suggest)%20it's%20easy,%20you'll%20see.%3C/p%3E%3Cp%3EWash%20and%20dry%20jars%20and%20lids.%3C/p%3E%3Cp%3EWhile%20you're%20filling%20your%20jars%20(to%20within%201/2%22%20of%20top)%20with%20your%20warm%20apple%20butter%20you%20should%20have%20your%20water%20bath%20heating%20up.%3C/p%3E%3Cp%3EOnce%20the%20jars%20are%20filled,%20wipe%20the%20rims%20with%20a%20damp%20cloth%20and%20screw%20on%20the%20lid%20(don't%20over%20tighten).%3C/p%3E%3Cp%3EPlace%20jars%20in%20the%20water%20canning%20rack,%20lower%20into%20the%20canner,%20make%20sure%20they%20are%20covered%20with%20water%20by%20at%20least%201%22%20and%20turn%20up%20the%20heat.%3C/p%3E%3Cp%3EOnce%20you%20reach%20a%20boil,%20boil%20for%2015%20minutes.%3C/p%3E%3Cp%3ECarefully%20remove%20jars%20from%20the%20canner%20and%20sit%20on%20a%20dry%20towel.%3C/p%3E%3Cp%3ESit%20and%20listen.%20%20Plink,%20Plink,%20Plink%20-%20the%20jars%20will%20seal%20as%20they%20cool%20on%20the%20towel.%20%20Wipe%20jars%20clean%20and%20store%20or%20add%20your%20own%20special%20touches%20to%20give%20away%20as%20gifts.%3C/p%3E){kind=link}
