Courgette And Spinach Torte

Ingredientes

  • 2 Tbsp. Extra virgin olive oil with a hint of garlic
  • 1 lrg Garlic clove, crushed
  • 1 tsp Chilli pwdr, (Cayenne pepper)
  • 50 gm Pine kernels, (2oz)
  • 500 gm Courgettes, (1lb)
  • 250 gm Cooked spinach leaves, (8oz)
  • 4 x Large eggs Salt and pepper

Direcciones

  1. Heat the oil in a large non-stick frying pan and gently fry the garlic, chilli pwdr and pine kernels for about 5 min.
  2. Remove the pine kernels from the pan and place in a mixing bowl.
  3. Grate the courgettes and pour off any excess liquid. Add in the courgettes to the mixing bowl with the pine kernels.
  4. Squeeze excess liquid from the spinach and add in to the courgette and pine kernel mix. Mix the ingredients together well using a fork.
  5. Return the mix to the frying pan and cook over a moderate heat for 5 min to reduce the liquid content.
  6. Whisk the Large eggs well, and then season with salt and pepper. Pour the Large eggs over the courgettes and spinach and carefully tilt the pan to distribute the egg.
  7. Lift the torte up round the edges of the pan and leave to cook gently for 5 min.
  8. Place the frying pan under a warm grill for 3 min till the egg is set and golden brown.
  9. Remove the pan from the heat and let it stand for 5 min.
  10. Slide the torte on to a serving plate, and then cut into wedges.
