Ingredientes

  • 1 tsp Extra virgin olive oil
  • 1/2 c. Minced Onion
  • 2 tsp Chopped Garlic
  • 1 x Jalapeno, Finely Minced, optional
  • 1 1/2 lb Courgette, Cut Into 1/4" Circles
  • 1/2 c. Minced Red Bell Pepper
  • 1/4 tsp Basil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 x Egg
  • 2 x Egg Whites
  • 1 c. Nonfat Cottage Cheese
  • 1 Tbsp. Grated Parmesan Cheese

Direcciones

  1. Preheat oven to 350 degrees.
  2. Heat oil in a nonstick pan. Saute/fry onion, garlic and jalapeno pepper till the onion is soft. Add in 2 Tbsp. of water if too dry. Add in courgette and red pepper and continue cooking till courgette is tender but still hard. Add in seasonings and set aside.
  3. Mix Large eggs and cottage cheese with a fork till well blended.
  4. Spray a 10" pie plate with nonstick spray. Place vegetable mix in bottom of pie plate. Cover with egg and cottage cheese mix. Sprinkle parmesan cheese on top.
  5. Bake for 30 min or possibly till a knife inserted in the middle comes out clean.
