Ingredientes

  • 2 Tbsp. fresh lemon juice
  • 1 tsp grated lemon peel
  • 1 tsp Dijon mustard
  • 5 Tbsp. extra virgin olive oil
  • 1/2 c. thinly-sliced fresh basil
  • 1/2 c. paper-thin slices red onion Salt to taste Freshly-grnd black pepper to taste
  • 1 1/2 lb medium courgette trimmed, quartered lengthwise, then cut crosswise in half

Direcciones

  1. Combine lemon juice, lemon peel and mustard in bowl; gradually whisk in oil. Stir in basil and onion. Season with salt and pepper. Let stand at least 1 hour and up to 6 hrs, stirring occasionally.
  2. Steam courgette till just crisp-tender, about 5 min. Transfer to large bowl; cold completely. Add in dressing and toss to coat. Let stand 1 hour for flavors to develop, stirring often.
  3. This recipe yields 6 to 8 servings.
