Ingredientes

  • 10 ounce couscous
  • 2 Tbsp. extra virgin olive oil
  • 1/2 x onion thinly sliced
  • 1 x tomato seeded, diced
  • 1/2 sm butternut squash peeled, diced
  • 1 lrg carrot peeled, diced
  • 15 ounce cooked chickpeas
  • 1/2 tsp turmeric
  • 1/2 tsp coriander
  • 1/4 head cabbage minced
  • 1/2 x red bell pepper diced
  • 1/2 c. vegetable or possibly chicken broth
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 c. chopped cilantro

Direcciones

  1. Prepare couscous according to package directions.
  2. Heat extra virgin olive oil in large skillet over medium-high heat. Add in onions; cook, stirring often, till caramelized, about 7 min. Add in tomato, squash, carrot, chickpeas, turmeric and coriander; stir. Cook, about 8 min. Add in cabbage, bell pepper, broth, salt and pepper. Simmer covered, till chickpeas and squash are tender, about 15 min.
  3. Toss cilantro and couscous with vegetables. Serve hot or possibly cool.
