Receta Couscous With Vegetables

Ingredientes
- 10 ounce couscous
- 2 Tbsp. extra virgin olive oil
- 1/2 x onion thinly sliced
- 1 x tomato seeded, diced
- 1/2 sm butternut squash peeled, diced
- 1 lrg carrot peeled, diced
- 15 ounce cooked chickpeas
- 1/2 tsp turmeric
- 1/2 tsp coriander
- 1/4 head cabbage minced
- 1/2 x red bell pepper diced
- 1/2 c. vegetable or possibly chicken broth
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 c. chopped cilantro
Direcciones
- Prepare couscous according to package directions.
- Heat extra virgin olive oil in large skillet over medium-high heat. Add in onions; cook, stirring often, till caramelized, about 7 min. Add in tomato, squash, carrot, chickpeas, turmeric and coriander; stir. Cook, about 8 min. Add in cabbage, bell pepper, broth, salt and pepper. Simmer covered, till chickpeas and squash are tender, about 15 min.
- Toss cilantro and couscous with vegetables. Serve hot or possibly cool.
