%20egg%20yolks,%20which%20therefore%20left%20us%20with%20eight%20unused%20egg%20whites.%20We%20set%20those%20aside%20and%20saved%20them%20for%20another%20project%20that%20you'll%20be%20hearing%20about%20soon%20as%20well.%3C/p%3E%3Cp%3EDISCLAIMER:%20The%20lovely%20pictures%20you%20are%20about%20to%20see%20were%20not%20out%20first%20attempt.%20We%20were%20overly%20confident%20and%20although%20I%20don't%20think%20either%20one%20of%20us%20can%20pinpoint%20exactly%20where%20we%20erred,%20but%20the%20first%20batch%20turned%20into%20a%20scrambled%20egg%20custard%20before%20we%20could%20get%20it%20in%20the%20oven.%3C/p%3E%3Cp%3EIt%20was%20disgusting.%3C/p%3E%3Cp%3EBut,%20try,%20try%20again,%20they%20always%20say,%20and%20we%20are%20not%20easily%20deterred%20from%20Creme%20Brulee,%20so%20we%20persevered.%20And%20our%20efforts%20were%20rewarded%20with%20this:%3C/p%3E%3Cp%3ECreme%20Brulee%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPut%20a%20pie%20dish%20of%20about%208-inches%20in%20diameter%20in%20the%20freezer%20for%20at%20least%2020%20minutes.%20Half-fill%20the%20sink%20with%20cold%20water.%20(yeah,%20ok,%20we%20didn't%20bother%20with%20the%20sink%20of%20water.)%20This%20is%20just%20a%20precaution%20in%20case%20the%20custard%20looks%20as%20if%20it's%20about%20to%20split,%20in%20which%20case%20you%20should%20plunge%20the%20pan%20into%20the%20water%20and%20whisk%20the%20custard.%20I'm%20not%20saying%20it%20will%20-%20with%20so%20many%20egg%20yolks%20in%20the%20rich%20cream,%20it%20thickens%20quickly%20and%20easily%20enough%20-%20but%20I%20always%20feel%20better%20if%20I've%20done%20this.%3C/p%3E%3Cp%3EPut%20the%20cream%20and%20vanilla%20bean%20(she%20never%20talks%20about%20splitting%20the%20bean%20and%20scraping%20out%20the%20seeds,%20but%20we%20are%20not%20of%20the%20mind%20to%20waste%20a%20perfectly%20good%20vanilla%20bean,%20so%20we%20split%20ours%20and%20scraped%20out%20the%20seeds%20before%20adding%20it%20to%20the%20cream)%20into%20a%20saucepan%20and%20bring%20to%20the%20boiling%20point,%20but%20do%20not%20let%20boil.%20Beat%20the%20eggs%20and%20sugar%20together%20in%20a%20bowl,%20and,%20still%20beating,%20pour%20the%20flavored%20cream%20over%20it,%20bean%20and%20all.Rinse%20and%20dry%20the%20pan%20and%20pour%20the%20custard%20mix%20back%20in.%20Cook%20over%20medium%20heat%20(or%20low,%20if%20you're%20scared)%20until%20the%20custard%20thickens,%20whisking%20almost%20constantly:%20about%2010%20to%2012%20minutes%20should%20do%20it.%20You%20do%20want%20this%20to%20be%20a%20good,%20voluptuous%20creme,%20so%20don't%20err%20on%20the%20side%20of%20runny%20caution.%20Remember,%20you've%20got%20your%20sinkful%20of%20cold%20water%20to%20plunge%20the%20pan%20into%20should%20it%20really%20look%20as%20if%20it's%20about%20to%20split.%3C/p%3E%3Cp%3EWhen%20the%20cream's%20thick%20enough,%20take%20out%20the%20vanilla%20bean,%20retrieve%20the%20pie%20dish%20and%20pour%20the%20creme%20into%20the%20severely%20chilled%20container.Leave%20to%20cool,%20then%20put%20in%20the%20refrigerator%20until%20truly%20cold.%20Sprinkle%20with%20Demerara%20sugar,%20spoonful%20by%20spoonful,%20and%20burn%20with%20a%20blowtorch%20until%20you%20have%20a%20blistered%20tortoiseshell%20covering%20on%20top.%3C/p%3E%3Cp%3EPut%20back%20in%20the%20refrigerator%20if%20you%20want,%20but%20remember%20to%20take%20it%20out%20a%20good%2020%20minutes%20before%20serving.%20At%20which%20stage,%20put%20the%20bowl%20on%20the%20table%20and,%20with%20a%20large%20spoon%20and%20unchecked%20greed,%20crack%20through%20the%20sugary%20carapace%20and%20delve%20into%20the%20satin-velvet,%20vanilla-speckled%20cream%20beneath.%20No%20more%20talking:%20just%20eat.%3C/p%3E%3Cp%3EAnd%20that's%20just%20what%20we%20did.%20We%20brought%20the%20chilled%20dish%20out%20of%20the%20fridge%20and%20then%20torched%20it%20there%20at%20the%20kitchen%20table%20until%20it%20was%20caramelly%20and%20gorgeous,%20and%20then%20we%20demolished%20it.%20Yes,%20the%20entire%20thing,%20in%20one%20sitting,%20between%20the%20three%20of%20us.%20I%20was%20proud%20of%20Whitney,%20the%20girl%20can%20throw%20down.%20She%20wasn't%20shy%20about%20going%20back%20for%20seconds,%20and%20I%20have%20a%20new%20respect%20for%20the%20girl.%3C/p%3E%3Cp%3ERock%20on,%20Nigella!%3C/p%3E){kind=link}
