.%20To%20me,%20Christmas%20was%20not%20meant%20to%20be%20spent%20freezing%20your%20ass%20off%20in%20the%20snow...it%20is%20best%20celebrated%20with%20ocean%20breezes,%20sunshine%20and%20fish%20tacos%20(omg!%20fish%20tacos!).%3C/p%3E%3Cp%3EThat%20being%20said,%20its%20also%20pretty%20fun%20celebrating%20with%20some%20traditional%20Christmas%20goodies%20on%20the%20big%20day.%20Maybe%20some%20glazed%20ham%20or%20a%20cheese%20ball?%20And%20definitely%20pie.%20This%20might%20just%20be%20the%20quintessential%20holiday%20pie.%20It%20is%20festive%20and%20colorful%20with%20in-season%20juicy%20pears,%20cranberries%20and%20a%20struesel-like%20Ginger%20Snap%20crumb%20topping%20that%20is%20to%20die%20for.%20Its%20the%20type%20of%20thing%20that%20is%20just%20asking%20to%20be%20enjoyed%20with%20a%20glass%20of%20fresh%20egg%20nog%20while%20watching%20The%20Muppets%20Christmas%20Carol.%3C/p%3E%3Cp%3EThis%20isn't%20complicated%20either.%20If%20you%20are%20doing%20some%20entertaining,%20you%20can%20easily%20make%20this%20pie%20the%20day%20before,%20store%20in%20the%20fridge,%20and%20just%20let%20it%20sit%20at%20room%20temp%20for%20a%20few%20hours%20before%20serving.%20It%20was%20delightful%20with%20a%20dollop%20of%20whipped%20cream%20and%20I%20am%20just%20guessing%20-%20going%20out%20on%20a%20limb%20here%20-%20that%20this%20would%20be%20simply%20devilish%20with%20a%20scoop%20of%20vanilla%20bean%20ice%20cream.%3C/p%3E%3Cp%3EEnjoy%20and%20Happy%20Holidays%20everyone!!%3C/p%3E%3Cp%3ECranberry-Pear%20Pie%20with%20Ginger%20Snap%20Crumb%20Topping%3C/p%3E%3Cp%3EOn%20a%20lightly%20floured%20surface,%20roll%20out%20the%20pie%20dough%20to%20a%2012-inch%20round%20and%20fit%20it%20into%20a%209-inch%20glass%20pie%20plate.%20Trim%20the%20overhang%20to%201%20inch,%20fold%20it%20under%20and%20crimp%20decoratively.%20Brush%20the%20rim%20with%20the%20egg%20wash%20and%20refrigerate%20the%20pieshell%20until%20chilled.%3C/p%3E%3Cp%3EMAKE%20THE%20TOPPING:%20In%20a%20medium%20bowl,%20stir%20together%20the%20flour,%20granulated%20sugar,%20brown%20sugar,%20gingersnap%20crumbs,%20ginger%20and%20salt.%20Stir%20in%20the%20melted%20butter%20until%20large%20crumbs%20form.%3C/p%3E%3Cp%3EMAKE%20THE%20FILLING:%20Preheat%20the%20oven%20to%20350%C2%B0%20F%20(176%20C).%20In%20a%20large%20bowl,%20toss%20the%20pears%20with%20the%20cranberries,%20lemon%20juice,%20lemon%20zest%20and%20vanilla.%20In%20a%20small%20bowl,%20toss%20the%20sugar%20with%20the%20cornstarch,%20then%20stir%20the%20sugar%20into%20the%20fruit.%3C/p%3E%3Cp%3EPour%20the%20fruit%20into%20the%20chilled%20pie%20shell%20(I%20found%20I%20had%20just%20a%20bit%20more%20than%20would%20fit).%20Pour%20the%20gingersnap%20crumbs%20onto%20the%20pie,%20carefully%20spreading%20them%20to%20the%20edge%20to%20cover%20the%20filling%20completely.%20Set%20the%20pie%20on%20a%20foil-lined%20baking%20sheet%20(in%20case%20stuff%20bubbles%20over).%20Bake%20on%20the%20bottom%20rack%20of%20the%20oven%20for%201%201/2%20hours,%20or%20until%20the%20crust%20is%20golden%20and%20the%20filling%20is%20bubbling;%20cover%20the%20pie%20loosely%20with%20foil%20if%20the%20top%20is%20browning%20too%20quickly.%20Let%20cool%20before%20slicing.%3C/p%3E){kind=link}
