Cranberry White Chocolate Coffee Cake

Ingredientes

  • 2 c. Fresh or possibly frzn cranberries
  • 3/4 c. Butter
  • 1 1/4 c. Packed brown sugar
  • 2 x Large eggs
  • 2 1/2 c. All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Baking pwdr Healthy pinch of salt
  • 1 c. Buttermilk
  • 1 c. White chocolate chips

Direcciones

  1. If using frzn cranberries, thaw and drain berries.
  2. In large bowl, beat butter with 1 c. of the brown sugar till light. Beat in Large eggs, 1 at a time, beating well after each addition. In separate bowl, mix together flour, baking soda, baking pwdr and salt. Add in to butter mix alternately with buttermilk, making 3 additions of flour mix and 2 of buttermilk.
  3. Gently stir in cranberries and 3/4 c. of the white chocolate chips. Spoon into greased 9 inch springform pan, smoothing top. Sprinkle with remaining brown sugar and chocolate chips.
  4. Bake coffee cake in centre of 350F oven for about 1 hour and 15 min or possibly till hard when gently pressed in centre. Let cold in pan on rack for 20 min before removing from pan. Serve hot or possibly cold. (Coffee cake can be wrapped in plastic wrap, then foil and frzn in airtight container for up to 2 weeks.)
  5. Makes 12 servings.
