.%20%20Not%20just%20because%20of%20the%20pasta.%20%20These%20dishes%20are%20what%20you'd%20find%20on%20the%20menus%20of%20Cajun%20wannabe%20restaurants.%20%20In%20the%201980s%20Chef%20Paul%20Prudhomme%20sparked%20a%20Cajun%20food%20craze%20that%20made%20its%20way%20across%20the%20country.%20%20A%20lot%20of%20the%20food,%20though,%20was%20Cajun%20for%20the%20masses--dishes%20that%20Maw%20Maw%20never%20made.%20%20For%20instance,%20if%20Maw%20Maw%20%22blackened%22%20something,%20she%20tossed%20it%20out!%3C/p%3E%3Cp%3EBut%20just%20because%20these%20dishes%20are%20mainstream%20and%20Maw%20Maw%20didn't%20make%20them%20(or%20thought%20they%20were%20mistakes%20and%20fed%20them%20to%20the%20dogs)%20doesn't%20mean%20I%20won't%20eat%20them.%3C/p%3E%3Cp%3EYou%20know%20by%20now%20I'll%20eat%20just%20about%20anything,%20right?%3C/p%3E%3Cp%3EMy%20Maw%20Maw%20never%20made%20dishes%20like%20Crawfish%20Fettuccine%20or%20Pastalaya%20and%20her%20Maw%20Maw%20never%20made%20dishes%20like%20that%20either.%3C/p%3E%3Cp%3ECertain%20Maw%20Maws%20would%20never%20pair%20crawfish%20with%20pasta.%20%20For%20Heaven's%20sake!%20%20That%20would%20be%20a%20plum%20crazy%20waste%20of%20perfectly%20good%20crawfish.%20If%20you%20were%20lucky%20enough%20to%20have%20crawfish,%20you%20boiled%20them%20and%20invited%20the%20masses.%20Or%20you%20made%20etouffee%20and%20piled%20it%20on%20rice.%3C/p%3E%3Cp%3EIt's%20hard%20to%20believe%20since%20S%20LA%20is%20so%20nutso%20over%20crawfish%20that%20for%20some%20generations,%20regardless%20of%20how%20you%20cooked%20%E2%80%98em,%20you%20sure%20didn%E2%80%99t%20admit%20to%20eating%20them!%20There%20was%20a%20stigma%20attached.%20Who%20would%20eat%20something%20that%20burrows%20in%20the%20mud?%3C/p%3E%3Cp%3EBut%20I%20misspoke%20because%20someone's%20Maw%20Maw%20sure%20makes%20these%20newfangled%20%22Cajun%22%20dishes.%20The%20Boy%E2%80%99s%20Maw%20Maw.%3C/p%3E%3Cp%3EMy%20mother-in-law%20makes%20Crawfish%20Fettuccine%20for%20special%20occasions.%20She%20treats%20it%20as%20something%20decadent--reserved%20for%20holidays%20and%20birthdays.%20It's%20full%20of%20rich%20succulent%20crawfish,%20half%20and%20half,%20and%20onions,%20bell%20pepper,%20and%20celery%20bathed%20in%20butter.%20%20Oh.%20%20And%20Velveeta%20cheese.%3C/p%3E%3Cp%3EYes.%20%20Velveeta.%20%20Wait%20don't%20leave%20just%20yet.%3C/p%3E%3Cp%3EI%20don%E2%80%99t%20like%20eating%20Velveeta.%20I%20hesitate%20when%20it's%20in%20an%20ingredient%20list.%20%20And%20when%20I%20do%20cook%20with%20it,%20it%20makes%20me%20feel%20so%20very%20bad.%3C/p%3E%3Cp%3EWait.%20I%20misspoke%20again.%20%20(What's%20wrong%20with%20me%20today?)%3C/p%3E%3Cp%3EI%20love%20eating%20Velveeta.%20(There.%20%20Yeah,%20I%20said%20it!)%20It%E2%80%99s%20creamy%20and%20melty%20and%20salty.%20And%20it%20makes%20me%20feel%20so%20very%20good.%3C/p%3E%3Cp%3EOh,%20come%20on.%20Admit%20it.%20You%20know%20you%20have%20a%20naughty%20food%20too!%20%20What%20is%20it?%3C/p%3E%3Cp%3ESecret's%20safe%20with%20me.%3C/p%3E%3Cp%3EMise%20en%20place%20for%20Crawfish%20Fettuccine:%20butter...and%20lots%20of%20it,%20onion,%20bell%20pepper,%20jalapeno%20pepper,%20celery,%20garlic,%20green%20onion,%20crawfish%20tails,%20flour,%20salt,%20pepper,%20half%20and%20half,%20velveeta%20(you%20know%20you%20want%20to),%20fettuccine,%20parmesan%20cheese%3C/p%3E%3Cp%3EStart%20cooking%20the%20fettuccine%20so%20it's%20ready%20when%20everything%20else%20is.%3C/p%3E%3Cp%3ESaute%20the%20vegetables%20in%20butter.%20%20Smells%20so%20good.%3C/p%3E%3Cp%3EThen%20add%20the%20crawfish%20tails,%20flour,%20salt,%20&%20pepper%20and%20cook%20for%20about%2015%20min.%20%20Smells%20even%20better.%3C/p%3E%3Cp%3EAdd%20the%20half%20and%20half%20and%20velveeta%20and%20cook%20for%20about%2015%20minutes%20to%20thicken%20and%20reduce.%3C/p%3E%3Cp%3EGo%20ahead%20and%20take%20a%20taste.%3C/p%3E%3Cp%3EYa%20know%20ya%20wanna%20be%20naughty%20like%20that.%3C/p%3E%3Cp%3EToss%20in%20the%20cooked%20pasta%20and%20place%20everything%20in%20a%20casserole%20dish.%20%20Top%20with%20grated%20Parmesan%20cheese.%20%20Bake%20at%20350%20for%20about%2015%20minutes.%3C/p%3E%3Cp%3ENote:%20the%20recipe%20below%20is%20for%20a%2013%20x%209%20pan,%20which%20will%20feed%20a%20crowd.%20%20I%20halve%20the%20recipe%20and%20use%20an%208%20x%208%20dish.%20%20I%20don't%20halve%20the%203%20green%20onions%20or%203%20cloves%20of%20garlic;%20I%20use%202%20of%20each.%3C/p%3E%3Cp%3ELet's%20not%20split%20hairs...er...garlic%20cloves.%3C/p%3E%3Cp%3EServe%20up%20the%20naughtiness.%3C/p%3E%3Cp%3ELinking%20with%20Dishing%20It%20Up%20(Casserole%20Month)%3C/p%3E%3Cp%3ECrawfish%20(or%20Shrimp)%20Fettuccine%3C/p%3E%3Cp%3Efrom%20Ms.%20enPlace%3C/p%3E%3Cp%3ECook%20the%20fettuccine%20according%20to%20package%20directions.%3C/p%3E%3Cp%3ESaute%20the%20first%206%20ingredients%20in%20melted%20butter.%20%20When%20vegetables%20are%20tender,%20add%20the%20crawfish%20tails,%20along%20with%20any%20fat%20in%20the%20package,%20salt%20&%20pepper,%20and%20flour.%20%20Stir%20to%20coat%20the%20mixture%20in%20flo
