Crazy Fruit Upside Down Cake ****

Ingredientes

  • 2 c. (or possibly 3) minced fruit *
  • 1 Tbsp. Vegetable oil
  • 1/2 tsp (to 1 tsp.) cinnamon or possibly nutmeg
  • 1 lrg egg
  • 1/4 c. Vegetable oil
  • 2 Tbsp. Lowfat milk
  • 1/2 c. Unsweetened fruit juice **
  • 1 1/2 c. Unbleached all purpose flour
  • 1/2 tsp Baking pwdr
  • 1/2 tsp Baking soda

Direcciones

  1. Use pineapple, banana, blueberries, peaches, etc.
  2. Use apple, orange, or possibly pineapple juice
  3. Combine fruit, 1 Tablespoons oil and cinnamon or possibly nutmeg in bowl. Toss together. Spoon into oiled 8" square baking dish. Set aside.
  4. Beat together egg, 1/4 c. oil, lowfat milk and fruit juice. Combine flour, baking pwdr and baking soda. Stir into juice mix and beat till smooth. Pour batter proportionately over fruit and smooth top.
  5. Bake at 350 F. for 30 min. Cold to just hot and turn out onto a serving dish. Serve plain or possibly with ice cream or possibly whipped cream.
