Receta Crazy Fruit Upside Down Cake ****

Ingredientes
- 2 c. (or possibly 3) minced fruit *
- 1 Tbsp. Vegetable oil
- 1/2 tsp (to 1 tsp.) cinnamon or possibly nutmeg
- 1 lrg egg
- 1/4 c. Vegetable oil
- 2 Tbsp. Lowfat milk
- 1/2 c. Unsweetened fruit juice **
- 1 1/2 c. Unbleached all purpose flour
- 1/2 tsp Baking pwdr
- 1/2 tsp Baking soda

- * Use pineapple, banana, blueberries, peaches, etc.
- ** Use apple, orange, or possibly pineapple juice
- Combine fruit, 1 Tablespoons oil and cinnamon or possibly nutmeg in bowl. Toss together. Spoon into oiled 8" square baking dish. Set aside.
- Beat together egg, 1/4 c. oil, lowfat milk and fruit juice. Combine flour, baking pwdr and baking soda. Stir into juice mix and beat till smooth. Pour batter proportionately over fruit and smooth top.
- Bake at 350 F. for 30 min. Cold to just hot and turn out onto a serving dish. Serve plain or possibly with ice cream or possibly whipped cream.
