Receta Cream of Cauliflower Soup with Saffron & Annatto Oil

Cream of Cauliflower Soup.

Soup ingredients.
Mise En Place for vegetables.
Heat water and broth to a boil.
Add saffron. Cover and let steep for 20 minutes.
Heat Ghee and Annatto Oil over medium low heat.
Add onions and celery.
Saute until tender.
Add Cauliflower.
Stir to coat.
Add broth. Bring to boil. Cover and simmer until very tender.
Allow soup to cool slightly.
Puree until very smooth.
Return soup to pot. Add herbs and spices to taste. Add half & half and return to simmer to serving.
I served the soup with grilled cheese sandwiches and grapes.
