%20and%20I%20always%20buy%20two%20cartons.%20For%20Easter%20appetizers,%20stuffed%20mushrooms%20will%20make%20an%20appearance%20and%20during%20the%20week,%20a%20creamy%20mushroom%20soup,%20a%20mushroom%20wine%20sauce,%20a%20frittata%20and%20on%20Saturday,%20as%20a%20break%20from%20all%20my%20holiday%20cooking,%20flat%20bread%20pizza%20made%20with%20all%20my%20leftovers....yay%20for%20the%20cook!!!%20Oh,%20that's%20me.%3C/p%3E%3Cp%3EYay%20for%20me!!%3C/p%3E%3Cp%3ENothing%20went%20to%20waste.%20Since%20I%20do%20all%20my%20prep%20work%20on%20Sundays,%20I%20sit%20at%20my%20kitchen%20table%20with%20my%20TV%20shows%20on%20my%20iPad%20(the%20Nudge%20is%20always%20watching%20sports%20of%20some%20sort%20on%20the%20BIG%20TV),%20I%20got%20my%20cutting%20board,%20my%20knives,%20my%20mushrooms,%20three%20bowls%20and%20a%20cup%20of%20coffee,%20and%20went%20to%20work.%20First%20I%20popped%20the%20stems%20from%20inside%20the%20prettiest%20mushrooms,%20into%20one%20bowl%20those%20went.%20One%20dish,%20done.%20In%20the%20next%20bowl,%20I%20threw%20those%20stems%20and%20the%20chopped%20up%20ugly%20mushrooms%20for%20the%20soup%20(they%20will%20be%20pur%C3%A9ed),%20%20and%20the%20rest%20were%20sliced%20for%20both%20the%20frittata,%20the%20wine%20sauce%20and%20the%20pizza.%3C/p%3E%3Cp%3EDONE%3C/p%3E%3Cp%3EEach%20portion%20went%20into%20snack,%20sandwich%20and%20storage%20bags%20and%20those%20were%20stashed%20in%20a%20plastic%20container.%20Easy%20grab%20and%20go!%3C/p%3E%3Cp%3EI%20also%20will%20do%20that%20with%20any%20other%20vegetables%20that%20make%20a%20few%20appearances%20in%20the%20rest%20of%20the%20dishes,%20like%20carrots,%20onions%20and%20garlic.%20Whatever%20does%20not%20get%20used,%20will%20be%20labeled%20and%20placed%20in%20another%20plastic%20container%20in%20my%20freezer.%20In%20a%20week%20or%20two%20that%20bin%20will%20be%20emptied%20in%20a%20soup.%20I%20do%20my%20leeks%20the%20same%20way,%20and%20even%20chop%20all%20my%20scallions.%20Now,%20you%20may%20think%20I%20am%20wasting%20plastic%20bags%20but%20I%20give%20them%20a%20quick%20rinse%20and%20reuse%20them%20next%20Sunday.%20I%20also%20reuse%20some%20as%20garbage%20bags,%20to%20throw%20away%20those%20items%20that%20will%20stink%20up%20your%20garbage%20before%20the%20sanitation%20crew%20can%20haul%20them%20away%20(like%20those%20Fancy%20Feast%20cans,%20whew!!).%20The%20larger%20ones%20line%20a%20small%20garbage%20bowl%20on%20my%20counter.%20I%20have%20tried%20using%20those%20small%20plastic%20Glad%20containers,%20but%20they%20take%20up%20too%20much%20room,%20are%20hard%20to%20see%20what%20is%20in%20them%20and,%20sorry,%20but%20less%20dirty%20dishes%20I%20have%20to%20wash%20(those%20suckers%20don't%20do%20well%20in%20a%20dishwasher)%20is%20another%20time%20saver.%3C/p%3E%3Cp%3EMy%20first%20dish%20using%20those%20'ugly'%20mushrooms%20and%20stems%20is%20this%20tummy%20warming%20soup.%3C/p%3E%3Cp%3EThis%20was%20so%20full%20of%20mushroom%20flavor%20(umami)%20and%20I%20will%20let%20you%20in%20on%20how%20I%20did%20it%20using%20button%20mushrooms.%3C/p%3E%3Cp%3EEvery%20once%20in%20a%20while%20you%20can%20find%20dried%20mushrooms%20on%20sale.%20Two%20reasons,%20pieces%20that%20are%20not%20whole%20mushrooms%20and%20less%20desirable%20and%20stores%20reorganizing%20to%20make%20room%20for%20more%20salable%20ingredients.%20If%20you%20can%20find%20them%20buy%20all%20you%20can%20afford.%20They%20last%20forever,%20great%20to%20grind%20and%20make%20a%20powder%20that%20will%20add%20a%20flavor%20to%20stews,%20soups,%20sauces%20and%20even%20homemade%20pasta.%20You%20can%20also%20order%20mushroom%20powder%20online%20at%20any%20site%20that%20sells%20spices.%20My%20favorite%20is%20this%20one.%20While%20you're%20there%20buy%20some%20tomato%20powder%20also,%20another%20secret%20ingredient%20used%20in%20professional%20kitchens.%3C/p%3E%3Cp%3EWhen%20making%20a%20soup%20that%20requires%20a%20puree%20of%20the%20aromatics,%20make%20sure%20the%20first%20batch%20of%20cooking%20is%20with%20only%20those%20vegetables%20that%20will%20be%20pureed.%20How%20many%20times%20I%20have%20dumped%20my%20garnish%20in%20with%20my%20base%20and%20had%20to%20fish%20it%20out,%20you%20do%20not%20want%20to%20know.%20When%20you%20have%20kids%20(and%20husbands)%20pulling%20at%20your%20skirt%20tails,%20you%20can%20forget%20what%20order%20things%20need%20to%20be%20in%20and%20%22POOF%22%20there%20goes%20the%20barley......OMG%20that%20doesn't%20go%20in%20there%20yet!!%3C/p%3E%3Cp%3ECream%20of%20Mushroom%20Barley%20Soup%3C/p%3E%3Cp%3Emakes%204%20servings%3C/p%3E%3Cp%3E1.%20In%20a%20heavy%20stock%20pot,%20heat%20olive%20oil%20and%20saute%20leeks,%20shallots%20and%20button%20mushrooms%20until%20soft%20and%20starting%20to%20color.%20Add%20the%20wine%20and%20simmer%20until%20it%20almost%20evaporates.%3C/p%3E%3Cp%3E2.%20Meanwhile%20boil%203%20cups%20salted%20water%20in%20a%20saucepan%20and%20cook%20the%20barley%20for%2030%20minutes.%20Remove%20and%20drain.%3C/p%3E%3Cp%3E3.%20In%20a%20small%20fry%20pan,%20saute%20the%20shiitake%20mushrooms.%20Reserve.%3C/p%3E%3Cp%3E4.%20Add%20the%20flour%20to%20the%20stockpot%20and%20stir%20to%20combine.%20Add%20the%20evaporated%20milk,%20the%20beef%20broth,%20thyme%20leaves,%20mustard,%20mushroom%20powder,%20soup%20greens%20and%20water.%20Simmer,%20uncovered%20for%2040-45%20minutes.%3C/p%3E%3Cp%3E5.%20Using%20a%20stand%20or%20hand%20blender,%20puree%20the%20soup%20until%20it%20is%20completely%20smooth.%20Strain%20through%20a%20sieve%20if%20needed.%20Add%20barley%20and%20simmer%20until%20the%20barley%20is%20soft,%20about%2015%20minutes%20more.%20Soup%20will%20continue%20to%20thicken.%3C/p%3E%3Cp%3E6.%20Taste%20for%20seasonings%20and%20adjust.%20Add%20cream%20and%20sauteed%20shiitake%20mushrooms%20and%20heat%20through.%3C/p%3E%3Cp%3E7.%20Sprinkle%20with%20parsley%20and%20serve.%3C/p%3E){kind=link}
