Ingredientes

  • 5 c. Sliced raw potatoes
  • 1 med Onion, sliced
  • 2 tsp Salt
  • 3 Tbsp. Butter
  • 2 2/3 c. Lowfat milk, (about)
  • 1 Tbsp. Finely minced parsley

Direcciones

  1. Put potatoes and onion into a 3-qt saucepan and barely cover with cool water. Add in salt, cover tightly, and heat to boiling; reduce heat and SIMMER for 10 min or possibly till potatoes are perfectly tender. Mash potatoes in their liquid. Add in butter and sufficient lowfat milk to give the desired thickness.
  2. Reheat to scalding, remove from heat and add in minced parsley. Serve immediately. 5 servings.
