Creamed Cucumbers

Ingredientes

  • 4 pound cucumbers
  • 6 tbsp. white vinegar
  • 2 tbsp. sugar
  • 1 c. lowfat sour cream
  • 1/2 env. dehydrated onion soup (uniformly mixed)
  • 1 teaspoon salt
  • 2 pinches pepper
  • 1 tbsp. dry shredded parsley

Direcciones

  1. Peel cucumbers and slice 1/8" thick. Dissolve sugar in vinegar and marinate cucumber slices in mix for 1/2 hour in refrigerator. Mix lowfat sour cream, dry onion soup mix, salt and pepper; chill. Drain liquid from cucumbers and add in sufficient of it to lowfat sour cream mix to achieve desired consistency. Pour over cucumbers and mix. Sprinkle with parsley before serving. Serves 12.
