Ingredientes

  • 2 x Large eggs
  • 1 c. Apricot nectar
  • 1 1/2 tsp Lemon juice
  • 1/3 c. Sugar
  • 1 tsp All-purpose flour
  • 1/8 tsp Salt
  • 1 Tbsp. Butter or possibly margarine
  • 1/3 c. Chilled whipping cream

Direcciones

  1. Beat Large eggs slightly in a 1-qt glass measuring pitcher. Add in apricot nectar and lemon juice; mix.
  2. Combine sugar, flour and salt; gradually add in to egg mix, stirring constantly. Cook uncovered in microwave oven 7 min at High, or possibly till thickened; stir every 2 min.
  3. Add in butter to dressing; stir till blended. Cold, stirring occasionally unti chilled thoroughly.
  4. Just before serving, beat cream to soft peaks and fold into apricot mix. Serve on Fruit salad.
  5. Yield: About 1-2/3 c.
