,%20I%20couldn't%20pin%20down%20a%20recipe%20I%20liked%20for%20these%20creamy%20enchiladas.%20Unbelievable%20huh?%20Well%20I%20decided%20to%20just%20combine%20a%20few%20of%20the%20ones%20I%20did%20come%20across%20and%20go%20with%20my%20own%20instinct.%20Glad%20I%20did!%20These%20were%20just%20what%20I%20wanted%20in%20an%20enchilada.%20The%20first%20thing%20I%20did%20was%20to%20boil%20my%20chicken%20breasts%20in%20a%20large%20stock%20pot.%20For%20this%20I%20quartered%201%20large%20onion,%20coarsely%20chopped%202%20carrots%20and%202%20celery%20stalks.%20I%20tossed%20in%20the%20chicken%20breasts%20and%20vegetables%20and%20covered%20them%20with%208%20cups%20of%20water.%20Next%20I%20tossed%20in%20about%208%20whole%20peppercorns,%202%20bay%20leaves,%201%20tsp.%20of%20ground%20thyme%20(our%20thyme%20plant%20is%20trying%20real%20hard%20to%20die%20on%20us),%20a%20handfull%20of%20fresh%20parsley,%20and%20a%20heaping%20Tblsp.%20of%20kosher%20salt.%20This%20I%20brought%20to%20a%20boil%20and%20then%20reduced%20to%20simmer%20for%20approximately%201%20to%201-1/2%20hours.%20Removed%20chicken%20to%20platter%20and%20let%20stock%20cool%20a%20bit.%20Then%20strained%20the%20stock%20into%20the%202%20cup%20sized%20plastic%20take%20out%20containers%20(like%20you%20get%20at%20the%20chinese%20restaurants%20for%20your%20take%20out%20soups,%20you%20know%20the%20ones;%20(round,%20opaque-perfect%20for%20holding%202%20or%204%20cups%20of%20stock?)%20to%20freeze%20for%20later%20use.%20Then%20here's%20what%20I%20did%20to%20finish%20the%20enchiladas.%3C/p%3E%3Cp%3EShred%20the%20chicken%20when%20cool%20enough%20to%20handle.%3C/p%3E%3Cp%3ESaute%20some%20onion%20and%20garlic%20until%20tender.The%20amount%20of%20these%20are%20up%20to%20you.%20More%20if%20you%20like%20or%20leave%20out%20if%20you%20don't%20like%20either.%3C/p%3E%3Cp%3EI%20then%20added%20the%20chicken%20and%201/2%20cup%20of%20the%20chicken%20stock,%202%20heaping%20Tblsp.%20of%20chopped%20green%20jalepeno%20chiles,%204%20oz.%20of%20softened%20cream%20cheese,%201/2%20cup%20of%20sour%20cream%20and%201/2%20cup%20of%20heavy%20cream.%20Added%20a%201/2%20tsp.%20cumin%20and%201/2%20tsp.%20chipotle%20chili%20pepper%20powder%20and%20a%20pinch%20of%20kosher%20salt.%20I%20also%20added%20a%20tsp.%20of%20cilantro%20paste%20(no%20fresh%20on%20hand).%20Stirred%20to%20combine%20and%20let%20simmer%20about%2015%20minutes%20over%20low%20heat.%3C/p%3E%3Cp%3EThen%20microwaved%20my%2012%22%20tortilla%20shells%20so%20they%20would%20be%20pliable%20(you%20can%20also%20heat%20up%20the%20enchilada%20sauce%20and%20dip%20your%20tortillas%20in%20the%20warm%20sauce%20to%20make%20them%20pliable)%20and%20filled%20with%20chicken%20mixture,%20rolled%20into%20enchiladas%20and%20put%20in%20a%209%20x%2013%20baking%20dish%20lightly%20sprayed%20with%20canola%20oil.%20Poured%20my%20can%20of%20Enchilada%20Sauce%20(next%20time%20will%20try%20a%20homemade%20version)%20over%20top%20and%20drown,%20I%20mean%20cover,%20in%20shredded%20Monterey%20Jack%20and%20Cheddar%20cheeses.%3C/p%3E%3Cp%3ECover%20with%20foil%20and%20bake%20in%20350%20degree%20oven%20for%2045%20minutes,%20uncovering%20for%20the%20last%2010%20minutes.%20Let%20cool%20a%20little%20and%20top%20with%20sour%20cream%20and%20diced%20scallions.%3C/p%3E%3Cp%3EI%20also%20made%20my%20own%20refried%20beans%20to%20go%20with%20the%20enchiladas.%3C/p%3E%3Cp%3EI%20used%20one%20cup%20of%20%20mayo%20coba%20beans%20,%20(they%20go%20by%20many%20names)%20and%20covered%20them%20with%20water%20about%203%22%20above%20the%20beans.%20I%20also%20added%202%20Tblsp.%20of%20rendered%20bacon%20fat,%20a%20bay%20leaf,%20a%20good%20pinch%20of%20salt%20(always%20cook%20with%20Kosher)%20and%20a%20smashed%20garlic%20clove.%20Brought%20to%20a%20boil%20and%20then%20simmered%20for%20an%20hour%20while%20the%20chicken%20was%20doing%20its%20simmering.%20When%20tender,%20drain%20and%20reserve%201%20cup%20of%20the%20cooking%20liquid%20and%20put%20beans%20into%20a%20pan%20large%20enough%20to%20mash%20the%20beans%20with%20your%20potato%20masher%20adding%20reserved%20cooking%20liquid%20as%20needed%20to%20moisten%20to%20desired%20consistency.%20Turn%20heat%20on%20to%20medium%20low%20and%20add%20..%20yup,%20you%20guessed%20it%20-%20Cheese.%20Cover%20pan%20and%20let%20cheese%20melt.%3C/p%3E%3Cp%3EThe%20final%20results:%20SCRUMPTEEDEELICIOUS.%3C/p%3E%3Cp%3EAnd%20a%20bonus%20too%20boot,%20My%20homemade%20Chicken%20Stock.%20We%20are%20now%20set%20for%20some%20wonderful%20soups%20this%20fall/winter.%20However,%20I%20am%20sure%20I%20will%20need%20to%20make%20more%20of%20this%20stock%20before%20winter%20actually%20sets%20in%20here.%20We%20hope%20you%20enjoy.%3C/p%3E%3Cp%3EMichael%20and%20Carla%3C/p%3E){kind=link}
