.%20%20This%20new%20skillet%20is%20a%20huge%20one%20in%20comparison,%20a%207%20QT.%20Family%20Size.%20(I%20can%20cook%20bacon%20on%20one%20side,%20potatoes%20o'brien%20in%20the%20middle%20and%20eggs%20on%20the%20other%20end%20-%20HA).%20Well%20any%20way,%20wouldn't%20you%20know%20there%20was%20a%20large%20picture%20on%20the%20box%20of%20this%20wonderful%20looking%20pasta%20dish.%20Oh,%20the%20power%20of%20suggestion%20can%20be%20so%20strong%20at%20times!%20So%20after%20assessing%20the%20picture%20for%20days%20this%20is%20what%20we%20came%20up%20with%20and%20might%20I%20say%20ours%20looks%20as%20good%20as%20the%20picture%20did.%3C/p%3E%3Cp%3ESo%20after%20researching%20the%20web%20for%20a%20fitting%20recipe%20I%20found%20this:%20Creamy%20Chicken%20Primavera%20.%20I%20adapted%20it%20to%20suit%20my%20preferences.%3C/p%3E%3Cp%3EFirst%20I%20baked%20my%20chicken%20breasts%20in%20the%20oven%20at%20350%20degrees%20with%20a%20sprinkling%20of%20salt,%20pepper%20and%20olive%20oil.%20Thank%20Ina%20Garten%20for%20that%20one%20;%20)%20!%20When%20cooked%20through%20set%20aside%20to%20cool%20to%20the%20touch.%3C/p%3E%3Cp%3EChop%20carrots,%20zucchini,%20onions%20and%20mushrooms.%3C/p%3E%3Cp%3EThen%20par%20boil%20the%20carrots,%20zucchini%20and%20peas%20for%20approximately%203%20minutes.%20Do%20NOT%20throw%20this%20water%20out%20as%20you%20can%20now%20start%20your%20choice%20of%20pasta%20cooking%20at%20this%20point.%20Use%20a%20fine%20strainer%20or%20a%20chinese%20spider%20to%20pull%20out%20your%20veggies.%3C/p%3E%3Cp%3EImmediately%20stopping%20the%20par%20boil%20in%20an%20ice%20water%20bath.%3C/p%3E%3Cp%3EReserving%20vegetables%20to%20the%20side.%3C/p%3E%3Cp%3EI%20then%20sauteed%20the%20onions%20first%20in%20olive%20oil%20and%20a%20tblsp.%20of%20butter%20until%20just%20translucent%20on%20medium%20heat%20and%20here%20I%20say%20it%20depends%20on%20your%20stove%20as%20to%20how%20long%20that%20will%20take.%20Every%20stove%20and%20oven%20has%20different%20calibrations%20as%20to%20the%20heat;%20be%20it%20a%20new%20appliance%20(perfect%20heat)%20or%20older%20appliances%20such%20as%20mine%20is%20(not%20so%20perfect)%20-%20my%20oven%20actually%20runs%20about%2025%20degrees%20hotter%20than%20the%20than%20the%20%22dial%20%22%20is%20set%20for%20so%20I%20adjust%20accordingly.%20Next%20I%20added%20to%20the%20onions%20the%20mushrooms%20and%20cooked%20until%20they%20were%20just%20beginning%20to%20soften.%20Then%20I%20added%20another%20of%20my%20own%20twists%20to%20this%20recipe,%201/2%20cup%20of%20white%20wine%20and%20let%20reduce%20until%20almost%20evaporated.%20Next%20add%20carrots,%20zucchini%20and%20peas%20and%20cook%20until%20all%20are%20tender.%20At%20this%20point%20chop%20chicken%20into%20small%20cubes%20and%20add%20to%20vegetables%20and%20reduce%20heat%20to%20low.%20Here%20I%20added%20the%20oregano%20and%20thyme%20instead%20of%20the%20basil%20and%20I%20let%20it%20cook%20with%20a%20lid%20slightly%20vented%20for%20about%203%20to%205%20more%20minutes%20adding%20a%20splash%20of%20water%20as%20skillet%20gets%20dry.%20Finally%20adding%20the%20%22cheat%20sauce%22,%20(mine%20was%20a%20garlic%20-%20cheesy%20blend,)%20and%201/4%20cup%20of%20half%20and%20half%20to%20thin%20out%20the%20thickness%20of%20a%20jarred%20sauce.%20(Hey,%20I%20started%20out%20late%20in%20the%20evening!).%20Add%20pasta%20and%20let%20it%20warm%20through.%20Test%20for%20sesonings%20and%20add%20more%20salt%20and%20pepper%20if%20needed.%20Top%20with%20fresh%20grated%20parmesan%20cheese%20and%20a%20few%20chopped%20sprigs%20of%20parsley.%3C/p%3E%3Cp%3EAll%20I%20can%20say%20is%20Magnifico.%20This%20I%20will%20make%20again.%20And%20again.%20And%20again.%20You%20get%20the%20point.%20Try%20it,%20you'll%20like%20it!%20-%20Okay,%20I%20know%20I%20am%20showing%20my%20age.%20Oh%20well.%3C/p%3E%3Cp%3EHope%20somewhere%20out%20there%20it%20is%20not%20as%20rainy%20and%20gloomy%20looking%20as%20we%20are%20here%20this%20week.%20I%20just%20want%20the%20fall%20weather%20without%20all%20the%20rain.%20However%20I%20think%20this%20will%20be%20a%20good%20week%20for%20Michael%20to%20make%20his%20Chili%20for%20me.%20We'll%20see%20what%20happens.%20I'll%20let%20you%20know.%3C/p%3E%3Cp%3EMichael%20and%20Carla%3C/p%3E){kind=link}
