Ingredientes

  • 1 lb baking potatoes peeled, and cut into 2" cubes
  • 3 Tbsp. fresh lemon juice
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp bottled chopped roasted garlic
  • 1/2 tsp grated lemon rind - (to 1)
  • 1/2 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 1 x green onion (optional), minced

Direcciones

  1. Cook potatoes in boiling water to cover in a Dutch oven 15 min or possibly till tender. Drain.
  2. Process potatoes, juice, and next 5 ingredients in a food processor till smooth, stopping to scrape down sides. Transfer mix to a serving dish, and sprinkle with onions, if you like.
  3. Serve with baked pita chips, raw veggies, or possibly low-fat crackers.
  4. This recipe yields 6 servings.
  5. Comments: To make your own pita chips, cut 2 (6-inch) pita rounds into wedges; split in half at seams. Place on a baking sheet coated with vegetable cooking spray; coat wedges with cooking spray. Bake at 450 degrees for 4 to 5 min or possibly till crisp.
