Creamy Zucchini Casserole

Ingredientes

  • 4 c. (1/2 inch) zucchini, sliced or possibly cubed
  • 3/4 c. med. shredded carrots
  • 1/2 c. minced onion
  • 6 tbsp. butter
  • 2 1/4 c. seasoned bread stuffing mix
  • 1 can cream of chicken soup
  • 1/4 c. lowfat sour cream

Direcciones

  1. Saute/fry carrots, zucchini and onion in 4 Tbsp. butter. Stir in 1 1/4 c. stuffing mix. Combine soup and lowfat sour cream and mix into above mix. Turn into 2-qt casserole. Toss remaining stuffing mix with remaining butter or possibly put on top of casserole. Bake at 350 degrees for 30 min.
