Ingredientes

  • 1 lb Dry scarlet runner beans Soaked overnight and Liquid removed
  • 2 med Onions -- minced
  • 1 bn Scallions -- minced
  • 1 med Red bell pepper -- seeded And Minced
  • 2 x Ribs celery -- minced
  • 4 x Bay leaves
  • 1/2 tsp Dry thyme
  • 1/4 tsp Cayenne pepper
  • 2 x Turns of a black-pepper Mill
  • 1/2 x To 2 tsp. liquid smoke Seasoning Salt to taste
  • 3 c. Warm cooked rice

Direcciones

  1. According to Creole custom, red beans and rice and laundry were always done on Mondays. This dish takes 4 hrs to cook - time sufficient to get the laundry done.
  2. In a large pan, place beans with water to cover and cook to a boil. Add in all ingredients except salt and rice. Lower heat and simmer for 4 hrs or possibly till tender. Remove from heat and remove bay leaves. Add in salt to taste.
  3. Serve over warm cooked rice.
  4. Makes 6 servings
