%20has%20a%20great%20recipe%20for%20baked%20fish%20sticks%20using%20tilapia.%20I%20decided%20to%20mix%20things%20up%20a%20bit%20and%20use%20my%20fillet%20of%20sole%20and%20throw%20in%20my%20own%20creamy%20dill%20dipping%20sauce.%20And,%20that%20my%20friends,%20is%20how%20great%20things%20happen.%20And,%20that%E2%80%99s%20the%20end%20of%20this%20story.%20But,%20really,%20try%20the%20fish.%3C/p%3E%3Cp%3ESo,%20why%20don%E2%80%99t%20we%20get%20to%20work?%3C/p%3E%3Cp%3EFirst,%20lets%20talk%20about%20a%20couple%20of%20ingredients.%20This%20recipe%20calls%20for%20plain%20panko%20bread%20crumbs.%20Be%20sure%20to%20buy%20plain%20and%20not%20Italian%20style.%20We%20are%20going%20to%20add%20our%20own%20seasonings%20in%20just%20a%20minute.%3C/p%3E%3Cp%3EGrab%20three%20shallow%20dishes.%20Pie%20plates%20work%20perfectly.%20Place%20the%20flour%20in%20one%20of%20them.%3C/p%3E%3Cp%3EIn%20another%20dish,%20lightly%20whisk%20your%20eggs.%3C/p%3E%3Cp%3EIn%20the%20last%20of%20the%20three%20dishes,%20mix%20together%20the%20plain%20panko%20bread%20crumbs,%20Old%20Bay%20Seasoning,%20garlic%20powder,%20dried%20parsley,%20just%20a%20touch%20of%20sea%20salt,%20and%20fresh%20ground%20pepper.%20Toss%20this%20mixture%20together%20with%20a%20couple%20of%20tablespoons%20of%20olive%20oil.%3C/p%3E%3Cp%3EHere%20is%20the%20sneaky%20fillet%20of%20sole%20that%20was%20masquerading%20as%20chicken%20in%20my%20freezer.%20I%20cut%20some%20of%20the%20larger%20pieces%20in%20half.%20Tilapia%20would%20also%20be%20a%20great%20choice.%20Just%20make%20sure%20you%20are%20using%20boneless%20fillets.%3C/p%3E%3Cp%3EStart%20the%20breading%20process%20by%20dredging%20a%20piece%20of%20fish%20in%20the%20flour.%3C/p%3E%3Cp%3ETransfer%20the%20flour%20coated%20fish%20to%20a%20piece%20of%20foil%20and%20repeat%20with%20remaining%20fish.%20You%20will%20dredge%20all%20of%20the%20fish%20in%20flour%20first%20before%20completing%20the%20rest%20of%20the%20breading%20process.%20I%20have%20found%20it%20to%20be%20a%20much%20tidier%20process%20to%20get%20this%20step%20out%20of%20the%20way.%3C/p%3E%3Cp%3ELine%20a%20baking%20sheet%20with%20a%20fresh%20piece%20of%20foil%20and%20spray%20it%20generously%20with%20non-stick%20cooking%20spray.%20Repeat%20with%20a%20second%20baking%20sheet%20if%20your%20fish%20will%20not%20fit%20on%20just%20one.%3C/p%3E%3Cp%3EPierce%20one%20of%20those%20flour%20coated%20pieces%20of%20fish%20with%20a%20fork%20and%20run%20it%20through%20the%20beaten%20egg,%20coating%20both%20sides.%20Allow%20excess%20egg%20to%20drip%20off.%3C/p%3E%3Cp%3EImmediately%20dredge%20the%20egg%20coated%20fish%20through%20the%20bread%20crumb%20mixture,%20making%20sure%20it%20is%20well%20coated.%3C/p%3E%3Cp%3EAs%20each%20piece%20of%20fish%20is%20coated%20in%20egg,%20then%20in%20bread%20crumbs,%20transfer%20it%20to%20the%20prepared,%20foil%20lined%20baking%20sheet.%20Don%E2%80%99t%20allow%20the%20pieces%20to%20touch;%20use%20a%20second%20baking%20sheet%20if%20necessary.%3C/p%3E%3Cp%3EBake%20the%20fish%20in%20a%20preheated%20425%20degree%20oven%20for%20about%2012%20to%2015%20minutes.%3C/p%3E%3Cp%3EWhile%20the%20fish%20is%20in%20the%20oven%20it%E2%80%99s%20time%20to%20whip%20up%20the%20Creamy%20Dill%20Sauce.%20I%20serve%20this%20sauce%20all%20the%20time%20as%20an%20accompaniment%20for%20salmon%20and%20it%E2%80%99s%20excellent.%20In%20a%20small%20bowl%20combine%20the%20mayonnaise,%20sour%20cream,%20lemon%20juice,%20dill,%20onion%20powder,%20and%20garlic%20salt.%20I%20used%20fresh%20dill%20here%20but%20if%20you%E2%80%99ve%20got%20dried%20on%20hand,%20use%20it!%20It%E2%80%99s%20great%20either%20way.%3C/p%3E%3Cp%3EThis%20one%20is%20a%20keeper.%20Call%20me,%20Martha.%3C/p%3E%3Cp%3ECrispy%20Baked%20Fish%20with%20Creamy%20Dill%20Sauce%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EFor%20the%20Crispy%20Baked%20Fish:%3C/p%3E%3Cp%3EInstructions:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20425%20degrees.%20Line%20two%20baking%20sheets%20with%20aluminum%20foil%20and%20spray%20generously%20with%20non-stick%20cooking%20spray;%20set%20aside.%3C/p%3E%3Cp%3EPlace%20flour%20in%20a%20wide%20shallow%20dish%20or%20pie%20plate.%20In%20another%20similar%20dish,%20combine%20plain%20panko%20bread%20crumbs,%20Old%20Bay,%20garlic%20powder,%20parsley,%20salt,%20pepper,%20and%20olive%20oil.%20In%20a%20third%20shallow%20dish,%20lightly%20beat%20the%20eggs.%3C/p%3E%3Cp%3EDredge%20a%20piece%20of%20fish%20in%20all-purpose%20flour,%20coating%20both%20sides.%20Transfer%20to%20a%20separate%20piece%20of%20foil%20temporarily.%20Repeat%20with%20remaining%20pieces%20of%20fish.%3C/p%3E%3Cp%3EOne%20by%20one%20dip%20the%20flour%20coated%20fish%20first%20into%20the%20egg,%20allowing%20excess%20to%20drip%20back%20into%20dish,%20then%20into%20panko%20mixture,%20coating%20both%20sides%20of%20the%20fish%20well.%20Place%20on%20prepared,%20foil%20lined%20baking%20sheets%20and%20repeat%20process%20with%20remaining%20flour%20coated%20fish.%3C/p%3E%3Cp%3EBake%20until%20lightly%20browned,%2012%20to%2015%20minutes,%20rotating%20sheets%20from%20top%20to
