Crispy Batter For Deep Fried Fish Fillet

Ingredientes

  • For batter
  • 2 Tbsp. oil
  • 250 x 300ml water or possibly sufficient
  • 1/2 tsp salt
  • 1/4 tsp grnd black pepper
  • 1 sm egg Sift
  • 4 1/2 Tbsp. plain flour
  • 1 1/2 Tbsp. rice flour
  • 2 1/4 Tbsp. corn flour
  • 3/4 Tbsp. baking pwdr
  • 3 tsp custard pwdr
  • 600 gm fish fillet, (preferably garoupa), cut into thick slices
  • 1/4 tsp salt
  • 1 pch pepper

Direcciones

  1. Lightly season fish fillet slices with salt and pepper.
  2. Combine all sifted dry ingredients in a mixing bowl. Make a well in the centre of the mix and add water gradually.
  3. Add beaten egg and stir well to mix. Add in oil to blend and mix into a batter with the consistency of pancake batter.
  4. Strain the batter.
  5. Dip the fish slices into the batter and deep-fry in warm oil till crispy and golden brown. Serve the crispy deep-fried fish dipped in chilli sauce.
