Crispy Lemon Grass Chicken

Ingredientes

  • 1 lb boneless chicken breast, sliced
  • 1 c. oil
  • 2 stalk lemon grass, thinly sliced
  • 2 x shallots, thinly sliced
  • 3 x cloves garlic, minced
  • 1/2 tsp salt
  • 1 Tbsp. soy sauce
  • 1 Tbsp. palm sugar, or possibly sugar
  • 4 x dry chilies
  • 1 Tbsp. fish sauce
  • 1/4 tsp black pepper

Direcciones

  1. In a wok with oil over high heat, deep-fry lemon grass till golden.
  2. Remove from oil and drain on paper towels. Pour off all but about 1 Tbsp. of the oil. Add in shallots and garlic and saute/fry briefly. Add in chicken and stir-fry about 3 min. Add in salt, soy sauce, palm sugar, dry chilies, fish sauce and black pepper, stirring till chicken is cooked. Serve on a platter sprinkled with deep-fried lemon grass.
