%20winds%20for%20our%20beach%20walk%20yesterday,%20that%20nagging%20thought%20of%20moving%20tropical%20was%20looking%20more%20and%20more%20like%20a%20better%20option.%3C/p%3E%3Cp%3EThis%20morning's%20early%20morning%20temps%20left%20frozen%20grass%20in%20the%20front%20yard%20and%20two%20chilly%20Maltese%20pups%20snuggling%20close%20together%20in%20their%20bed%20with%20no%20desire%20to%20head%20outside%20to%20freeze%20their%20tender%20little%20paws.%20%20Cranking%20the%20heat%20and%20wrapping%20my%20scarf%20(yes...%20in%20the%20house)%20just%20a%20tad%20tighter,%20I%20set%20to%20encourage%20the%20Spring%20Gods%20as%20best%20I%20could.%3C/p%3E%3Cp%3EPulling%20out%20my%20Christmas%20Gift,%20a%20bright%20and%20shiny%20new%20Double%20Belgian-Waffle%20Maker,%20the%20kids%20rose%20to%20aromas%20of%20freshly%20baked%20waffles.%20%20Having%20experimented%20over%20the%20last%20few%20weeks,%20I've%20discovered%20that%20my%20usual%20waffle%20recipes%20don't%20pair%20well%20with%20the%20Belgian%20maker,%20and%20a%20higher%20fat%20content%20seems%20to%20be%20key%20to%20crispiness%20along%20with%20a%20very%20thin%20batter.%3C/p%3E%3Cp%3EWith%20this%20new%20successful%20recipe%20under%20our%20belt,%20we%20soon%20found%20ourselves%20topping%20our%20perfectly%20crisped%20waffles%20with%20berries,%20syrup%20and%20a%20dusting%20of%20powdered%20sugar%20(representing%20snow...),%20and%20spring%20almost%20seemed%20a%20glimmer.%20%20Either%20that%20or%20the%20heat%20in%20the%20house%20was%20finally%20warming%20us%20up.%3C/p%3E%3Cp%3ECrispy%20Belgian%20Waffles%3C/p%3E%3Cp%3EThe%20Belgian%20Waffles%20we%20know%20today,%20are%20in%20reality%20an%20American%20creation,%20though%20they%20do%20have%20roots%20in%20Brussles.%20%20Belgian%20Waffle%20Makers%20feature%20deep%20grids%20which%20in%20turn%20create%20deep%20pockets%20in%20the%20crispy%20finished%20product.%20%20Belgian%20Waffles%20are%20noted%20for%20their%20golden,%20crispy%20outside%20and%20creamy-like,%20moist%20interior.%20%20The%20Belgian%20version%20typically%20uses%20yeast%20in%20place%20of%20baking%20powder,%20making%20it%20necessary%20(but%20OH,%20so%20worth%20it!)%20to%20plan%20ahead.%20%20We%20whisk%20up%20our%20batter%20the%20night%20before,%20and%20in%20the%20morning%20with%20the%20batter%20already%20prepared%20our%20waffles%20are%20done%20in%20no%20time.%3C/p%3E%3Cp%3ESearching%20for%20waffle%20recipes%20after%20I%20received%20%20my%20maker%20for%20Christmas,%20my%20heart%20sank%20as%20recipe%20after%20recipe%20came%20filled%20with%20high%20contents%20of%20oils,%20butters%20and%20white%20flours.%20%20%20While%20I%20don't%20mind%20such%20splurges%20on%20occasion,%20these%20recipes%20won't%20do%20for%20me%20as%20a%20%22good%20start%20to%20the%20day%22%20breakfast.%3C/p%3E%3Cp%3EAdapting%20numerous%20recipes%20into%20our%20version%20below,%20we've%20added%20whole%20wheat%20or%20spelt%20flour%20to%20increase%20fiber%20and%20protein,%20replaced%20whole%20milk%20or%20cream%20with%20skim%20or%20rice%20milk%20(for%20our%20lactose%20intolerant%20family%20member),%20and%20decreased%20the%20amount%20of%20oil%20or%20butter%20to%20reduce%20saturated%20fats,%20all%20while%20still%20maintaining%20the%20ever%20popular%20and%20traditional%20golden,%20crispy%20crust.%20%20Toss%20a%20few%20berries%20or%20bananas%20and%20nuts%20on%20top%20of%20your%20waffle%20and%20you%20have%20a%20decent%20start%20to%20your%20day.%3C/p%3E%3Cp%3EIn%20a%20large%20mixing%20bowl,%20combine%20the%20flours,%20flax%20(if%20using),%20yeast%20and%20salt,%20whisk%20to%20combine.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20add%20the%20oil%20or%20butter,%20sugar,%20milk,%20eggs%20and%20vanilla.%20%20Whisk%20vigorously%20to%20blend.%3C/p%3E%3Cp%3EAdd%20the%20wet%20ingredients%20to%20the%20dry%20ingredients,%20whisking%20vigorously%20again%20to%20combine%20thoroughly.%20%20I%20give%20it%20a%20good%201-2%20minute%20whisk%20(it's%20good%20for%20your%20arms!),%20or%20use%20a%20hand%20mixer%20to%20combine.%20%20Note:%20%20Your%20batter%20should%20be%20thin.%20%20Add%20a%20bit%20more%20milk%20if%20too%20thick.%3C/p%3E%3Cp%3ECover%20with%20plastic%20wrap%20and%20refrigerate%20several%20hours%20to%20overnight.%3C/p%3E%3Cp%3EWhen%20ready%20to%20use,%20remove%20from%20fridge.%20%20Heat%20up%20waffle%20maker%20and%20follow%20waffle%20maker%20directions.%3C/p%3E%3Cp%3ETop%20with%20fruit,%20nuts%20or%20a%20simple%20pat%20of%20butter%20along%20with%20syrup%20and%20powdered%20sugar%20if%20desired.%20%20Enjoy!%3C/p%3E%3Cp%3EOne%20VERY%20cold%20and%20empty%20San%20Diego%20beach...%20winds%20at%20nearly%2040%20MPH%20sent%20sand%20stinging%20across%20the%20face%20and%20a%20chill%20directly%20to%20my%20bones!%3C/p%3E){kind=link}
