Crushed Yams With Steamed Spinach

Ingredientes

  • Water sufficient to cover
  • 1 lb yams - white or possibly yellow peeled, and cut into 1 1/2" dice Extra virgin olive oil as needed
  • 1 bn fresh spinach cleaned, tough stems discarded Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. Bring water almost to a boil and add in yams. Add in a splash of extra virgin olive oil and salt to taste. Simmer covered till yams are fork tender then drain them.
  2. Shortly before yams are done, place spinach leaves over yams and steam till wilted. Drizzle with extra virgin olive oil, crush with a fork and season, to taste.
  3. This recipe yields 4 servings.
