Receta Crushed Yams With Steamed Spinach

Ingredientes
- Water sufficient to cover
- 1 lb yams - white or possibly yellow peeled, and cut into 1 1/2" dice Extra virgin olive oil as needed
- 1 bn fresh spinach cleaned, tough stems discarded Salt to taste Freshly-grnd black pepper to taste
Direcciones
- Bring water almost to a boil and add in yams. Add in a splash of extra virgin olive oil and salt to taste. Simmer covered till yams are fork tender then drain them.
- Shortly before yams are done, place spinach leaves over yams and steam till wilted. Drizzle with extra virgin olive oil, crush with a fork and season, to taste.
- This recipe yields 4 servings.
