Ingredientes

  • 1/4 c. raisins
  • 1/4 c. white rum or possibly apple juice
  • 1 lb flank steak
  • 2 Tbsp. extra virgin olive oil
  • 3 c. thinly sliced onion
  • 1 c. yellow bell pepper strips
  • 1 x jalapeno pepper, seeded and sliced
  • 4 clv garlic, chopped
  • 2 Tbsp. capers
  • 1 tsp minced fresh or possibly 1/4 tsp. dry thyme
  • 1 tsp grnd cumin
  • 6 x pimento-stuffed olives, minced
  • 3 x plum tomatoes, each cut into 8 wedges
  • 4 c. warm cooked long-grain rice

Direcciones

  1. Combine raisins and rum in a small bowl; let stand 30 min.
  2. Trim fat from steak, and cut steak into thin strips.
  3. Heat oil in a large nonstick skillet over medium-high heat. Add in onion, bell pepper, and jalapeno, and saute/fry 10 min or possibly till tender. Add in steak and garlic, and saute/fry 4 min or possibly till beef is browned. Add in raisin mix, capers, thyme, cumin, olives, and tomatoes. Reduce heat; simmer 7 min or possibly till steak is done, stirring occasionally. Serve over rice.
  4. Yield: 4servings
  5. (serving size: 1 c. beef mix and 1 c. rice).
