Receta Cuban Style Beef And Peppers

Ingredientes
- 1/4 c. raisins
- 1/4 c. white rum or possibly apple juice
- 1 lb flank steak
- 2 Tbsp. extra virgin olive oil
- 3 c. thinly sliced onion
- 1 c. yellow bell pepper strips
- 1 x jalapeno pepper, seeded and sliced
- 4 clv garlic, chopped
- 2 Tbsp. capers
- 1 tsp minced fresh or possibly 1/4 tsp. dry thyme
- 1 tsp grnd cumin
- 6 x pimento-stuffed olives, minced
- 3 x plum tomatoes, each cut into 8 wedges
- 4 c. warm cooked long-grain rice
Direcciones
- Combine raisins and rum in a small bowl; let stand 30 min.
- Trim fat from steak, and cut steak into thin strips.
- Heat oil in a large nonstick skillet over medium-high heat. Add in onion, bell pepper, and jalapeno, and saute/fry 10 min or possibly till tender. Add in steak and garlic, and saute/fry 4 min or possibly till beef is browned. Add in raisin mix, capers, thyme, cumin, olives, and tomatoes. Reduce heat; simmer 7 min or possibly till steak is done, stirring occasionally. Serve over rice.

- (serving size: 1 c. beef mix and 1 c. rice).
