,%20but%20I%20have%20been%20positively%20loving%20all%20the%20crisp,%20huge%20cucumbers%20in%20the%20markets%20all%20summer.%3C/p%3E%3Cp%3EBut%20for%20someone%20reason%20I%20cannot%20even%20look%20at%20a%20cucumber%20without%20a%20scene%20from%20The%20Importance%20of%20Being%20Earnest%20playing%20in%20my%20head%20and%20laughing%20out%20loud%20(just%20skip%20ahead%20to%201:48).%20What%20can%20I%20say,%20I%20am%20a%20geek%20for%20Oscar%20Wilde%20(fun%20fact:%20when%20I%20was%20a%20kid%20my%20sister%20played%20Lady%20Bracknell%20in%20this%20play%20and%20in%20the%20final%20night%20changed%20it%20to%20Dime%20bar%20sandwiches,%20which%20I%20thought%20was%20just%20too%20funny).%3C/p%3E%3Cp%3EThe%20fact%20is,%20cucumber%20sandwiches%20are%20quite%20fantastic.%20The%20traditional%20variety%20are%20dainty%20little%20things%20made%20with%20soft%20white%20bread,%20butter%20and%20paper-thin%20sliced%20English%20cucumber.%20I%20kicked%20it%20up%20slightly%20(and%20made%20it%20ever%20so%20slightly%20better%20for%20you)%20with%20a%20dill%20cream%20cheese%20spread%20and%20whole%20wheat%20bread%20instead%20of%20white.%20They%20make%20great%20snacks%20or%20hors%20d'oeuvres%20(even%20a%20light%20lunch)%20and%20of%20course%20are%20just%20delightful%20with%20Afternoon%20Tea.%20I%20wish%20I%20hosted%20things%20like%20book%20clubs%20just%20so%20I%20had%20an%20excuse%20to%20fill%20a%20tray%20with%20them.%3C/p%3E%3Cp%3EI%20enjoyed%20them%20instead%20with%20a%20homemade%20Mocha%20Frappuccino.%20I%20always%20have%20extra%20espresso%20in%20the%20mornings%20(because%20I%20cannot%20start%20my%20day%20without%20a%20Latte%20Macchiato).%20I%20simply%20freeze%20it%20in%20ziploc%20bag%20or%20ice%20trays%20and%20when%20I%20want%20an%20afternoon%20treat%20I%20break%20off%20a%20cube%20or%20two%20of%20it%20into%20the%20blender%20with%20some%20ice,%20milk%20and%20chocolate%20or%20caramel%20syrup%20-%20and%20voila%20-%20I%20just%20saved%20myself%20five%20bucks.%20My%20blender%20isn't%20the%20greatest%20so%20mine%20didn't%20quite%20have%20the%20consistency%20of%20the%20Starbucks%20variety%20(maybe%20you%20are%20lucky%20enough%20to%20have%20a%20nice%20blender),%20but%20they%20taste%20just%20as%20good%20and%20would%20make%20great%20after-school%20treats%20or%20even%20dessert.%3C/p%3E%3Cp%3ECucumber%20Sandwiches%3C/p%3E%3Cp%3Emakes%204%20triangles%20or%20about%201%20or%202%20servings...increase%20the%20amounts%20as%20needed%3C/p%3E%3Cp%3E1/4%20cucumber,%20sliced%20medium%20thin,%20or%20around%201%20cm%20thick%20(I%20recommend%20using%20a%20food%20processor%20or%20mandolin.%20Also%20cucumbers%20vary%20in%20size%20obviously%20-%20you%20need%20around%2016%20slices%20of%20cucumber)%3C/p%3E%3Cp%3E3%20tbs%20white%20wine%20vinegar%3C/p%3E%3Cp%3E2%20slices%20whole%20wheat%20sandwich%20bread,%20crusts%20removed%20(see%20photos%20above.%20Use%20a%20nice%20sharp%20knife%20and%20maybe%20a%20straight%20edge%20to%20make%20even%20squares)%3C/p%3E%3Cp%3Eabout%201/4%20cup%20low-fat%20cream%20cheese%3C/p%3E%3Cp%3E2%20tbs%20chopped%20fresh%20dill%3C/p%3E%3Cp%3Ecoarsely%20ground%20black%20pepper%3C/p%3E%3Cp%3Efew%20pinches%20of%20sea%20salt%3C/p%3E%3Cp%3EPlace%20the%20cucumbers%20in%20a%20bowl%20and%20pour%20the%20vinegar%20over%20the%20top%20of%20them.%20Sprinkle%20with%20some%20salt%20and%20set%20aside%20for%2010%20or%2020%20minutes.%3C/p%3E%3Cp%3EMeanwhile,%20prepare%20your%20bread%20slices%20and%20the%20cream%20cheese%20spread.%20In%20a%20small%20bowl%20combine%20the%20cream%20cheese%20with%20the%20dill,%20a%20pinch%20of%20salt,%20and%20a%20few%20turns%20of%20black%20pepper.%20Stir%20to%20combine%20and%20make%20it%20a%20soft,%20spreadable%20consistency%20(if%20you%20are%20making%20a%20lot%20of%20these,%20you%20could%20make%20this%20in%20the%20food%20processor%20or%20stand%20mixer).%3C/p%3E%3Cp%3ELay%20out%20your%20slices%20of%20bread%20and%20spread%20the%20cream%20cheese%20mixture%20over%20the%20top%20of%20them%20(just%20a%20nice%20thin%20coating%20or%20the%20cream%20cheese%20over%20powers%20the%20cucumbers%20who%20are%20the%20star%20of%20this%20show).%3C/p%3E%3Cp%3EPlace%20your%20cucumber%20slices%20on%20a%20paper%20towel,%20place%20another%20paper%20towel%20over%20the%20top%20of%20them%20and%20press%20down%20slightly%20to%20drain%20the%20excess%20liquid%20off%20the%20slices.%20You%20don't%20want%20the%20sandwiches%20getting%20soggy.%3C/p%3E%3Cp%3EPlace%205%20slices%20of%20cucumber%20on%20each%20slice%20of%20bread.%20Bring%20the%20sides%20together%20and%20press%20down%20so%20the%202%20sides%20stick%20together%20nicely%20(but%20don't%20squish%20the%20sandwich!).%20Cut%20in%20half%20diagonally%20to%20make%20little%20triangles%20and%20serve%20(you%20could%20even%20cut%20again%20to%20make%204%20triangles%20out%20of%20each%20sandwich%20instead%20of%202,%20depending%20on%20how%20you%20are%20serving%20them).%3C/p%3E%3Cp%3ESave-Your-Money%20Homemade%20Frappuccino's%3C/p%3E%3Cp%3Emakes%201%20very%20large%20or%20up%20to%204%20small%20servings%3C/p%3E%3Cp%3Eabout%202%20shots%20espresso,%20frozen%3C/p%3E%3Cp%3ESweetened%20syrup%20of%20your%20choosing%20-%20chocolate,%20caramel%20etc%20(or%20you%20can%20use%20a%20dash%20vanilla%20extract%20and%20a%20few%20tbs%20sugar%20as%20well).%3C/p%3E%3Cp%3EPut%20syrup,%20then%20frozen%20espresso,%20then%20ice%20in%20the%20blender.%20Pour%20milk%20over%20and%20blend%20until%20ice%20is%20mostly%20broken%20up.%20Add%20in%20a%20couple%20of%20spoonfuls%20of%20whipped%20cream.%20Continue%20blending%20until%20well%20mixed%20tasting%20and%20adding%20things%20as%20necessary.%3C/p%3E%3Cp%3EDivide%20into%20glasses%20and%20top%20with%20a%20dollop%20of%20whipped%20cream%20and%20drizzle%20with%20syrup%20or%20sprinkle%20with%20chocolate%20or%20cinnamon%20sugar.%3C/p%3E%3Cp%3ESo%20easy%20right?%3C/p%3E){kind=link}
