Curried Chicken Salad (Pkl)

Ingredientes

  • 1/4 c. mayonnaise
  • 2 Tbsp. mango chutney
  • 1/2 tsp curry pwdr
  • 1/2 tsp salt
  • 1/8 tsp nutmeg
  • 1/8 tsp white pepper
  • 1 c. plain yogurt
  • 3 c. cooked chicken, cubed
  • 2 c. cantaloupe, cubed
  • 2 med cucumber, peeled, seeded, cube
  • 3 x cantaloupe, cut in half
  • 1/2 c. slivered almonds, toasted

Direcciones

  1. Dressing: in blender container place first 6 ingredients, cover and blend till smooth, scrapping down side of continer occasionally. Spoon into medium bowl and sitr in yogurt till combined. Cover and chill at least 3 hrs for flavors to blend. Just before serving add in chicken, cubed cantaloupes and cucumbers to the dressing; toss gently if you like, place melon slices on individual plates; mound heaping c. of salad on each melon half. Sprinkle toasted almonds on top.
