Ingredientes

  • 1 c. Lentils
  • 1 Tbsp. Extra virgin olive oil
  • 2 x Garlic cloves, chopped
  • 1/2 lb Spinach leaves, washed, stemmed & minced
  • 14 ounce Can plum tomatoes
  • 2 Tbsp. Tamari
  • 2 tsp Curry pwdr
  • 1/4 tsp Grated ginger
  • 1/4 tsp Cinnamon
  • 1/4 tsp Nutmeg

Direcciones

  1. Wash lentils. Cook until tender but hard. Heat extra virgin olive oil in large pot & when warm add in garlic. Saute/fry for 1 minute. Add in spinach leaves & steam until they wilt. Add in lentils & rest of ingredients. Cover & simmer for 15 min. Serve over rice.
