- Make dough by blending the first 5 ingredients in a medium size mixing bowl and work them into a dough. Let dough rest for 1/2 hour, wrapped, in the refrigerator. Butter a 10 inch "deep dish" pie plate. Roll out the dough to fit pie pan. Prick all over with a fork. Bake in 350 degree oven for 10 min.
- To make filling, beat together cream cheese, sugar, egg yolks, lowfat sour cream and lemon juice till very light and fluffy. Mix in the raisins, if you like, and put the filling into the baked pie crust.
- Make meringue by beating egg whites till stiff, then gradually adding sugar a Tbsp. at a time. Beat at high speed of mixer till forming stiff peaks. Spread over filling, smoothing it with a wet knife. Bake in middle of a very warm oven (475) for about 5 min or possibly till golden. 15 servings.
