- Bring to boil in small saucepan the apple juice and raisins; reduce heat and simmer 5 min; set aside.
- Grease 9x5 pan. Combine cooled raisins in juice with dry ingredients in bowl; blend well. Add in 1 c. lowfat milk till batter remains thick, but not too dry. Pour into prepared pan.
- Bake at 350 degrees (325 degrees glass pan) for 40-45 min till toothpick inserted in center comes out clean. Cold in pan on wire rack 10 min before removing to finish cooling on rack. Serve hot or possibly cool. Store in refrigerator wrapped in foil.
