%20Cris-crossing%20the%20country%20on%20a%20weekly%20basis%20tends%20to%20lead%20to%20him%20trying%20to%20find%20decent%20food%20at%20decent%20prices%20that%20isn't%20always%20fast%20food,%20and%20tastes%20like%20home%20cooking%20when%20he%20can.%3C/p%3E%3Cp%3ESo%20anyway,%20he%20told%20me%20he%20had%20this%20amazingly%20yummy%20dish%20and%20wanted%20me%20to%20try%20to%20recreate%20it.%20Now,%20I%20was%20waiting%20for%20something%20I%20would%20have%20to%20really%20research%20and%20find%20a%20recipe%20for.%20But%20instead,%20he%20started%20describing%20something%20I%20think%20has%20graced%20most%20American's%20dinner%20tables%20at%20one%20point.%20Poor%20Daddy.%20Sometimes%20he%20lives%20such%20a%20sheltered%20life.%20LOL%20Okay,%20so%20that%20isn't%20true.%20What%20is%20true%20is%20that%20some%20of%20the%20ingredients%20in%20a%20standard%20version,%20and%20this%20one%20too,%20are%20things%20my%20mom%20can't%20eat,%20hence%20why%20he's%20never%20had%20it%20at%20home.%20I%20told%20him%20I%20would%20try%20to%20come%20up%20with%20my%20own%20recipe%20and%20see%20if%20I%20could%20re-create%20a%20close%20match%20to%20have.%3C/p%3E%3Cp%3EThe%20week%20of%20Thanksgiving%20I%20made%20this%20for%20our%20supper,%20and%20actually%20took%20him%20a%20bowl%20of%20leftovers%20when%20we%20celebrated%20with%20them.%20Well,%20it%20was%20kinda%20late,%20he%20had%20had%20a%20big%20meal,%20and%20dessert,%20but%20I%20still%20wanted%20him%20to%20taste%20it%20while%20I%20was%20there.%20So,%20my%20mom%20heated%20up%20a%20small%20dish%20for%20him%20to%20try.%20Well....let's%20just%20say%20that%20small%20dish%20turned%20into%20a%20bigger%20bowl,%20and%20he%20finished%20off%20the%20entire%20thing%20before%20we%20left!%20Yep,%20it%20was%20a%20hit!%20He%20declared%20it%20%22delicious%22%20and%20%22absolutely%20what%20he%20was%20looking%20for.%22%20In%20fact,%20he%20loved%20it%20so%20much%20he%20made%20me%20promise%20to%20make%20him%20a%20couple%20to%20freeze%20and%20have%20on%20hand%20for%20simple%20suppers%20when%20my%20mom%20isn't%20home.%3C/p%3E%3Cp%3EYa'll%20know%20how%20much%20I%20love%20casseroles,%20and%20this%20is%20definitely%20going%20to%20become%20a%20staple%20in%20our%20house.%20See,%20what%20I%20didn't%20tell%20you%20yet,%20was%20Daddy%20was%20lucky%20to%20get%20the%20bowl%20he%20did%20because%20my%20%22boys%22%20were%20fighting%20over%20the%20dish%20as%20soon%20as%20it%20came%20out%20of%20the%20oven!%20They%20could%20not%20get%20enough%20and%20loved%20every%20bite.%3C/p%3E%3Cp%3EThis%20is%20a%20great%20simple%20weeknight%20supper,%20or%20pot-luck%20dish!%20It%20can%20freeze%20and%20travel%20well,%20and%20feed%20a%20crowd%20for%20pretty%20cheap!%20I'm%20so%20glad%20my%20Daddy%20enjoyed%20what%20I%20came%20up%20with%20for%20him;%20and%20I'm%20also%20grateful%20he%20requested%20it%20in%20the%20first%20place,%20because%20look%20at%20the%20yummy%20creation%20it%20lead%20to!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375.%20Arrange%20chicken%20tenders%20on%20a%20baking%20sheet.%20Drizzle%20with%20olive%20oil.%20Season%20with%20salt%20and%20pepper.%20Roast%20for%2030%20minutes%20until%20done.%20Remove%20and%20set%20aside%20to%20cool%20enough%20to%20handle.%20When%20cool,%20chop%20or%20shred.%20%20Reduce%20oven%20to%20350.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20combine%20cooked%20chicken,%20rice,%20broccoli,%20cheese,%20milk,%20soups,%20onion,%20salt%20and%20pepper.%20Stir%20well%20to%20combine.%20Spray%20a%209x13%20dish%20with%20cooking%20spray.%20Pour%20chicken%20and%20rice%20mixture%20into%20dish%20and%20spread%20evenly.%20Top%20with%20diced%20butter.%20Bake%20for%2030-45%20minutes%20until%20heated%20through%20and%20cheese%20is%20melted.%20Stir%20before%20serving.%3C/p%3E%3Cp%3ECasseroles%20at%20Very%20Good%20Recipes%3C/p%3E){kind=link}
